I split the biscuits to make a cup in the tin foil “cup cake” tin, filled that with the bacon, eggs and cheese, then covered the top with left over biscuit dough.

Things may be trending to less insane for work! I made stuffed peppers last night which I had decided on way before I realized it would be 90. In NJ. In October. 90.

Snuck some extra veggies into these and used ground chicken. Everyone ate it with gusto!

Today I did a basic roasted salmon, potatoes with onions and a side of sauteed zucchini and green beans.

Okay, that makes sense. I thought it was a poached egg, which does not make sense. :slightly_smiling_face:

Two shitshow days in a row? Lovely. (Not.) That hasn’t happened in a while. But I survived and got home in time to make pizza.

Four of my small patio tomatoes (yes, the plant is still producing!) were stemmed and chopped, and then processed with tomato paste, garlic, salt, pepper, oregano and basil.

Leftover roast chicken was chopped and a very small head of broccoli was cut into florets and roasted with a bit of olive oil.

Sauce, chicken, broccoli, grated mozzarella and a sprinkle of Parm-Reg were layered onto half a ball of store-bought dough, and it was slid onto a hot pizza stone in a 475° oven for about 10-11 minutes.

Not too shabby! There was wine. Tonight there were two glasses. :wink:

Sorry you had two bad days @LindaWhit. Your cooking for one continues to amaze me. Beautiful meals night after night! And you deserved that 2nd glass of :wine_glass:

I’m actually sticking to my weekly meal planning!

Monday was roasted cod with tomatoes. Side was soba noodles/baby broccoli/corn cut off the cob/sesame oil/TJ’s chili onion crunch.

Tuesday was cod again (sale at Whole Foods) this time poached in coconut milk/PSTOC (chilies)/liberal fish sauce/lots of herbs and baby boy choy. Side of wild and brown basmati rice/farro. Forgot to take a photo.

Wednesday was red kidney beans steeped in the leftover coconut poaching liquid. Supplemented with more bok choy and peppers.

Tonight was spicy mushroom noodle soup. We started with good sourdough and a local sharp cheddar. Pan-fried baby broccoli as a side.

Its taking me a hour to cook this 1.25 pound ribeye . Salt and pepper with a little o.o . Set on counter for 2 1/2 hours . Now into the cast iron pan on very low heat. Turning occasionally. I think I’m trying to replicate a sous vide on the stove top . Just removed from the pan . Now I am going to let it rest . Turn the heat up on the skillet and sear . I think its going to be fantastic. White beans with tomato. Peas sauteed in butter. Wine to drink .:wine_glass: Cheers. You can probably guess the piece I am going to cut off .
