Pulled some tenderloin scraps from the freezer. These were pieces cut from the chain while cleaning and portioning a whole tenderloin. Had to tie some pieces to hold their shape but it turned out pretty good. Served with cut up Idaho and sweet potatoes oiled up and roasted in the oven and a Caesar salad

Wow. Delighted to find you guys. I’ve missed the WFD community! After the site redesign at the other place I asked a few times where people were migrating to, but they all got deleted and then I just faded out. Happy to see some familiar folks.

Tonight I made some soup in the slow cooker – romano beans, smoked sausage, kale, mirepoix and some leftover turkey. seasoned with a good bit of garlic and chili powder. It was nice to come home to dinner already done. i thought of whipping up some corn muffins, but opted not to. wiped out after the week and don’t really want the carbs.

Dinner is what the recipe calls prawn jambalaya - the recipe writer (unknown) bases this on the name’s derivation from French (slang?) for “mixed up”, rather than anything traditional to Louisiana (where I hope next year to eat a “real” version).

It does start with the Holy Trinity of Cajun food - celery, onion and red pepper being softened, along with garlic. Then in goes bay leaf (I grow bay in apot on the “kitchen patio”), pimenton, cayenne and brown rice. . A tin of tomatoes goes in as well as a tin of red kidney beans and vegetable stock (I may use fish stock instead). That all simmers till the rice is just about done. King prawns go in until they’ve turned pink. Finally parsley si stirred through and there’s a topping of chopped spring onion.

Thursday night we hosted 30 people for a holiday get together. Dinner was catered by a local taqueria. There was chicken, pork, beef, and grilled onions, fresh made corn and flour tortillas, taquitos, quesadillas, and sauces, veggies, rice, beans, guacamole, etc. We had tons of food left over so dinner last night was taco salads and some chips.

Just got back from the pub with my partner. We are making skate wings in the oven and a salad, that’s all. Gonna spread tom yum paste all over the wings, wrap them up in silver paper and bake. Just squeeze lot of lime juice over them before digging in. Would be nicer to use banana leaf and grill in a cast iron griddle but ain’t nobody got time (and inclination) for that having just returned from the pub.

Thanks, Harters. It was a lovely sunny, dry, cold day. There was no brill at the market today so we got skate wings for a change.

Tonight is the biggest, most anticipated evening here. Just another commercialised fictional holiday which we strongly reject.

Safeway had two small lobster tails marked down $4 and then 50% off so I had to have them. We’ve both had rotten colds all week so honestly lobster didn’t particular appeal. But I soldiered on :slight_smile: and made a salad. Some leftover bits from the olive bar from Thanksgiving, avocado, arugula and some of the soy-balsamic from Kenji that I made recently. The “breadsticks” are from whole slices of local sourdough brushed with garlic infused oo, toasted on the panini grill and cut. A tasty meal.

Out and about for some errands, dropping off poinsettias at work, and walking around a local antique store which has expanded to another floor.

Ended up going with a Moo Goo Gai Pan-ish dinner, slightly altered. Sauteed sugar snap peas, carrots, red bell pepper together, and removed it from the pan. Added some velveted chicken (sherry, cornstarch, s/p), thinly sliced onion, and minced garlic and sauteed over high heat, then added the veggies back in. Some soy sauce, a healthy pinch of sugar, and some crushed pink peppercorns.

Served over rice. Libation was just water.

Welcome, MAH! I’m here less than frequently, but I’m making a concerted effort to return. The soup sounds perfect.

If those are scraps, I wonder how the main tenderloin looks when you cook it - YUM!

The chain is a good piece of meat but it has some less desirable portions and some darn good portions if you don’t screw it’s up when removing it

It’s going to be Spam musubi. Hopefully I’ll remember to take a pix. I’m going to add a slice of avocado to a couple just to see. Mainly cause I have a half avo that needs to be eaten. More to follow :slight_smile:

Yes, I’m in NL. People can’t comprehend how this idiotic government bowed to pressure. They are vocal about black Piet no longer being “black”, but all they can do is sit round and “debate” til they are blue in the face but that’s all they ever do. Having a back bone is not something they are known for. Yeah, but anyways, to keep it food related I shall mention a pastry filled with almond paste, which is one of the specialities for this fictional holiday.

Upcoming…a sort of pan-European one-pot meal.

Chunks of chorizo and black pudding get a fry, as does onion, celery & garlic. A tin of chickpeas goes in, along with bay, thyme, a couple of chopped tomatoes and some stock. It simmers for 15 minutes. Foccacia provides the carb.

Hahahaha too funny to see this topic here. I’m a life long Aruba vacationer, who just returned from my annual trip. I’ve tried to explain to people about Sinter Clauses side kick, Black Pete/Piet, but very few can believe just how over the top ridiculous the character really is.

Too keep things somewhat on topic, I believe the tradition is children leave their shoes at the door and Sinter Claus and Piet fill them with candy and treats vs. gifts as celebrated in the US, correct?
