Hubby made Thai penang curry with chicken, squashes, red pepper, and corn over steamed green beans instead of rice. The babe enjoyed some as well - it was mild.
We spent the morning on a mountain horse trail ride. Fun and tiring.
Double soup day! Really cold today due to a nasty wind… met my friend at the store and we picked up stuff to make a late brunch- she was about to buy premade butternut squash soup and I wouldn’t let her! I went to get the squash and made us a simple soup from it- and my favorite one year old loved it too :))
Tonight was another bowl of that unattractive hippie soup from the other night, same nutritional yeast on top. Crazy bubbly kombucha a la carte

Weekend meals included take out pizza on Friday night from a new place in town.
Pork tenderloin stuffed with granny smith apple mixture on mashed potato/sweet potato mix and dilled carrots on the side.
Tonight, I made Serious Eats Moussaka, which was great. I’m making some lemongrass pork meatballs too to get ahead for the week.
Brine , rinse , fill bowl of chicken with clean water . Add two beaten eggs to that . Dredge in seasoned flour . Shallow fry around 330 degrees. Cover , uncover and turn often . Don’t walk away .
Two and a quarter pound beef chuck roast from the Slo Cooker. Just five hours because I wanted to slice it, not have it turn into a stew. That worked well. Cooked in a vegetable broth after being covered in crushed tomatoes. Dear wife remarked that the potatoes were “terrific”.
Another pie . Sausage , and tomato , with cheese . Wine to drink Cheers . It’s fun trying to tackle this dough beast .

Finally autumn settles down this weekend, last week we had a return of “heat wave” of the last summer days. The leaves of cherry tree are all gone now, while tomatoes and chilli pepper are still in full production, a few random strawberries are popping up here and there.
A few meals.
Home made veau liver pâté with sherry vinegar
Liver pan cooked 5 minutes with shallot finely chopped. Sherry vinegar was then added and cooked for 10 more minutes, until all liquid evaporated. Mixed everything until fine with soft butter. I added a lot of Kampot black pepper. Waited a day or two before degustation.
I didn’t feel the strong presence of pepper, it was completely integrated in the pate. We have been eating for days.
Roasted pork ribs, with minced garlic, soy sauce, oyster sauce, Shaoxing wine, honey salt and pepper and oil. Yummy! Served with stirred fried cabbage with dried shrimp.

Burgers and bourbon, Pour House. Then we headed to Old Glory for beers. Back to my place for the games. Then we played “garage band” mates for three hours straight! My fingers are sore. Ha!
Tonight dinner is beef stew with carrots, onions, potatoes and chuck. Stove pot style with saute spinach and vino.
My buddy baked a sweet potato pie. My mates dont head back to kiwi-land until Wed. Went exploring in NYC today.

Pizza last night. Made two pies - traditional margherita (no pic) and this one which had no sauce, but was topped with caramelized shallots, bacon, figs, gruyere , black pepper and evoo. Arugula after cooking - this was so good. Wine to drink.
Sounds almost like my evening last night. Burger/rum-armagnac/jammed lead guitar to some of my favorite rock legends till very late. Sore fingers in the AM. Well not too sore, I’ve been playing a lot more recently
Great minds…was your better half away on biz like mine…retirement has been such an odd thing…my gal’s still working…my buddies are trying to keep me busy and distracted. They think all this baking bread and kitchen madness is crazy retirement nesting.
If I don’t practice or play a few hrs I forget the set list. Plus, Warming up is good for my heart. …but yeah, hard on the joints.
Yeah a conference in Orlando. I’m not retired, just tired and work way less these days. 3-4 days a week
