Agree! I like making my own with broken spaghetti that is toasted in butter, as it gives it a nuttier flavor. But for last minute “home at 7, I want to be eating by 8”, it’s a good addition to the pantry.

I am making dinner to bring to another friend with a new baby. Her hubby is a chef so rather than go over the top, I opted for a slightly elevated comfort food menu: meatloaf with pancetta and spicy glaze, rich redskin mashed potatoes, steamed green beans with olive oil, lemon pepper, and chopped pistachio, zucchini carpaccio with shaved parm and Aleppo pepper, pumpkin loaf, and a lunch portion of last night’s bean soup. I will pick up some good local sliced bread for sandwiches on the way over, and probably some coconut waters (nursing can be really dehydrating!).
Back home we’ll have meatloaf, green beans, and mashed cauliflower for dinner. Pics later.
THAT is a perfect meal.

Have been in Minnesota for a week, grandsons wedding… Rhubarb growing in our daughters back yard, apples from her neighbors yard, not that photogenic but everyone scarfed it big time!
: made a giant apple rhubarb crisp…We go to Philly at least twice a year. We always enjoy it there.
Penne, asparagus, & bacon in spicy Parma Rosa sauce.
Chop a few bacon slices into large pieces and sauté until crispy. Drain from fat. Chopped tomatoes and garlic are then sauteed in the cooked bacon fat, then some crushed tomatoes added and sauteed, with a pinch of salt and a good bit of Aleppo pepper. Stirred in the heavy cream, then some grated Parm-Reg cheese, and some dried parsley.
The penne was cooked and spooned out to drain, then some chopped asparagus into the hot water to cook. Both drained, added back to the pot, sauce added to heat everything up, and served, topped with cooked bacon, additional Parm-Reg and dried parsley.
It was really good.
Dinner tonight is stir fry Patagonia U15 pink shrimp , cooked with lots of garlic, EVOO, a tin of anchovy in olive oil, chipotle and adobo sauce , lime zest and juice which I added to vine ripe tomatoes roasted in oven with EVOO, Italian seasoning til the tomatoes rendered their juices. I added feta cheese to my tomatoes but not to my son’s as he does not eat feta cheese ( nor anything white other than mozzarella cheese . No cream cheese, ricotta, whipped cream, creme fraiche , Mayo etc etc)
I roasted the shrimp shell and made stock with it to use as broth for paella which I plan to cook on Friday for his friends .
This was served with red kokuho rice. I actually counted the shrimp as they came in 2 lb bag. There are exactly 30 shrimps. I cooked 16 of them, 5 for each tray of tomatoes, ( my son will have one tray for his lunch tomorrow) and the extra shrimp divided among the 2 poms as treats. I had to be sure I took their shrimp out before I added the chipotle adobo sauce.
Mine in the red Emile Henry’s personal lasagna dish is red ( It. has feta) and my son has 2 of the blue personal lasagna dish. ( He always likes some for lunch the following day) There is feta in my tray but does not show in the picture as it is hidden by the shrimp and sauce, as well as partially melted.
I am starting to drink tart montmorency cherry juice added to sparkling water . There are claims that it helps insomnia as well as joint pains. The latest study shows that it reduces LDL cholesterol and lowers BP as well.

I might have a baby just to have you bring me a meal like that! Kudos to you!
(Actually since my baby is now 32 years old I think I am over the “hump” at this point in life)
