What's for Dinner #28 - 12/2017 - The Whatever Holiday Edition

It’s really that good. I was a congenital Hellmans kid, and dropped it like a hot potato when I tried Dukes.

I live in their distribution area so can buy it at the store…shoot me a pm and I’ll get it to you.

I had always purchased Hellman’s Real Mayonnaise in the large size from Costco for my chicken potato salad as well as chicken fruit cocktail salad ( posted this sometime this summer, lots of chicken breast, bets, potato and drained fruit cocktail). Since my husband’s passing, have not been using mayo as my son does not eat mayo ( or anything white, cream cheese, cottage cheese, feta cheese , sour cream etc). He threw my mayo out saying it was too old and occupy space in the fridge.
Recently, I purchased a roast turkey breast from Costco, needed mayo for sandwich. Tried Duke’s mayo since I had to purchase it from a local grocery store who does not carry the big jar I am used to. It was good. I guess if Costco carries Duke’s, I will switch brand.

I had Hellmann’s in the fridge, so I did a taste test side-by-side. I found Dukes to be very creamy and smoother on the palate; Hellmann’s is much thicker. On the tangy scale, Dukes has it a bit over Hellmann’s, especially at the end. The tang comes out there.

Which do I like better? It’s a toss-up, but I really liked the creaminess of Duke’s. I can’t get Dukes except by mail order, so I’ll probably stick with Hellmann’s or Cain’s.

I want to buy a small jar of Cain’s mayo to do a side-by-side-by-side. I found the order of their ingredients to be interesting - Hellmann’s has water as the 2nd ingredient, Duke’s as 3rd, and Cain’s shows as 4th, and Cain’s is the only one that uses only egg yolks.

Cain’s Ingredients: Soybean oil, egg yolks, distilled vinegar, water, sugar, salt, cider vinegar and spices.

Duke’s Ingredients: Soybean oil, eggs, water, distilled and cider vinegar, salt, oleoresin paprika, natural flavors, calcium disodium EDTA added to protect flavor.

Hellmann’s Ingredients: Soybean oil, water, whole eggs and egg yolks, vinegar, salt, sugar, lemon juice, calcium disodium EDTA (used to protect quality), natural flavors.

The placement of sugar in Cain’s mayonnaise is why I don’t like it. Far too sweet. Hellman’s has also been getting progressively sweeter as well, but I do like that they have a bit of lemon in there. When I lived in Duke’s country it seemed fine and was often on sale.

However, about 5 years ago, I began to find all of these to be too sweet, and Mr. SMT who isn’t a huge mayonnaise fan hated the stuff. At that point, I began to make my own at home. No sugar at all, better oil, and my favorite addition, Dijon mustard.

I find Cain’s too sweet as well. I often make homemade mayo and aioli and love it, but must confess there are a few things that I crave made with Hellmann’s. Rotisserie chicken salad, and my very food-savvy daughter-in-law’s favorite, old-fashioned potato salad with slightly overcooked potatoes, celery, onions and an Italian dressing splash while the potatoes are still warm.

I have yet to try Dukes.

Me too! I’m happy to ship to my HO’s in good standing. :slight_smile:Costco even sells it by the gallon, under $10 iirc if you want to split the container with friends!

I was a Hellmans girl too but Dukes is better.

I definitely need to try both Dukes and Hellmanns in a mixed salad such as either of these examples to see which I like better, since my taste test was a straight taste on my fingers.

Yesterday started with the in-laws coming over early to make 6 loves of the xmas bread - Potica. During the rising and waiting parts we were talking dinner recipes. They had just made tetrazzini which I have never made. So after a long kitchen clean up I made chicken tetrazzini with frozen peas/corn and artichoke hearts. Pretty good.

And the bread turned out too.

I usually don’t post my meals because they aren’t that photogenic, but I thought I’d share a couple from the past couple days.

We had gone out for our anniversary the other night and came back with leftover of the large main because we were so full by that point (we ordered like 6 things!).
It was a platter of pork - chop, belly, and sausage, along with apples, sweet potatoes, and cabbage, with an apple cider sauce. I ended up repurposing it into a cheese and meat platter for dinner for us and the kids (14 and 12yo). Cut the meat into smaller pieces, crisped up the belly a bit more, and served with some Beemster Gouda, an aged French goat cheese, and some Saucison Sec, iberico ham, and cornichon. Crackers and toasted baguette as delivery vehicles. Perfect way to use up the leftovers and get into the holiday mood.

Last night was prime rib. I hate having heavy food back to back to back during the holidays, so I try to break up heavy meals with lighter meals in between. Got the boneless prime rib roast from Costco. I wanted bone-in, but they were all so big and 4 of us couldn’t eat all that meat. So I went with a 4lb boneless roast. Let it sit out for 30 minutes before roasting to bring the temp up, I cut slits in it and inserted garlic slices, then rubbed the outside with a touch of salt, a little Montreal steak seasoning, and lots of black pepper. Roasted in high heat for 20 minutes, then brought it down and roasted until thermometer said 135. Let it sit, tented, while I roasted the potatoes (Parmesan, olive oil, thyme and salt/pepper) and sautéed the green beans. Prime rib was the perfect doneness for us. Served with a sour cream horseradish sauce with lemon juice and chopped chives. Delicious, with leftovers for lunch today!

I’m a best foods/helleman’s fan since ever, i ordered duke’s and liked it a lot but not enough to reorder when i need more. It was a little thinner/smoother and more tangy.
However, if you find Sir Kensington mayo on sale now that is really awesome. Full price it’s rather expensive. I actually switched to vegan mayo completely in my efforts to reduce any animal products and buy just mayo or veganaise at home but if given a jar of sir kensington i would certainly put to good use.

Ahhhh, that’s right - I remember it being mentioned awhile back. I did get some Sir Kensington ketchup, and it was really good! Will keep an eye out on Amazon for the mayo to try it as well.

I got the ketchup too, and a dijonnaise (sp?) that is outstanding. Slightly creamy with a nice mustard heat.

Sir Kensington’s was purchased by Unilever, I thought I read somewhere that they are not producing the same products.

Made some more orange-spiced nuts for my sister and BIL (a small baggie for mom if she wants), and a pot of chicken-corn chowder for both Mom and sister/BIL for freezer meals. Also watched the Patriots do a number on the Bills.

Slathered a pork loin with a mix of minced rosemary, garlic, s/p, and Dijon mustard, wrapped it up and tucked it into the downstairs fridge. Made a list of everything to bring to Mom’s tomorrow, watched the news and weather report for Christmas Day…up to 6" of snow, but it seems like it might be less…will see in the morning. Am keeping my fingers crossed.

Had leftovers for dinner, wrapped small, silly gifts for all three, ate some chocolate, and am now watching TV.

Hoping the weather is manageable to drive in and that your electricity doesn’t blink out again!
What is your corn chowder recipe? I made one for mom and dad freezer back in the summer that they loved but i figured that was mostly because it was fresh summer corn. I’ll make it chickenless or get one of my parents to do that part if it’s integral to the recipe…

More bubbles! My sister was over and we were doing a lot of gift wrapping for my nephew so dad opened another bottle :smile:

I literally stopped in my tracks when i found this stunning pile of local artichokes. I bought a few and we just did the usual cali home prep, steamed, served warm with mayo for my parents and i went with melted earth balance with garlic. (Not as pretty after cooking).
They had some bread and fancy cheese too, i went with salty edamame and bread.

This pan of Famous Mom Fudge is cooling on the counter, i’ll risk testing my dairy hating tummy with some for dessert (there’s a lotta butter involved! )

I live in a rural area where there is only Safeway and Giant Grocery Stores as well as an Italian Deli where I buy meat occasionally.
Every few weeks, I drive to Virginia to Costco and the Asian store to stock up, pick up and drop off my son at the airport.
Local grocery stores are only for emergency supplies.
I do not buy fruits from the local stores anymore as they are not only expensive but there is no taste .
So, I just buy fresh fruits and vegetable when I am in Va, and I have a huge supply of Costco’s frozen fruits.
Was pleasantly surprised to find Duke’s mayonnaise at Giant.

Old guy near me was really going at it trying to get the last bits out of his huge Nutella jar.

Whilst the pilots were checking their list which has hundreds of items and checking literally hundreds of buttons and knobs in the cockpit I already started watching “the story of ABBA”. I still remember all the songs and the lyrics to them! A bit emotional watching this documentary being an ABBA fan since I was a child.

It think it was a 3 hour flight to Istanbul. All the Turks got their Köfte meals, I chose vegetarian when the flight was booked.

Planned this trip 1 1/2 years ago. Once upon a time we were about to go here but my Doctor-Engineer was asked to come to Taiwan to solve some complex mathematical problems so we ended up going there and stayed 3 weeks in total and made a holiday out of it. It’s good to be here, finally.

I can never use Korean chopsticks. Nobody sees me spearing my food with them. They are flat, heavy and made of metal. Much energy is spent on using them without success. Anyway, more about my first meal in Korea tomorrow. I feel dead and can’t fall asleep but should try again to get some sleep. Jet lag is the worst going east. Time difference is 8 hours.

Happy holidays! I love quiet holidays. My family is great but very overwhelming. I like to visit at less emotional times. I hope the snow isn’t too bad, we got a light sprinkling last night.
