New Zealand leg of lamb, it was unusually mild tasting. I marintated it in olive oil, wine, garlic, fresh dill, thyme, mint, dried oregano salt and pepper, lemon zest and lemon juice, stuffed lots of garlic and oregano into slits I made in the meat. I really wanted to grill it outside but DH got home too late so I roasted it in the oven. Since he was in Westchester today, he stopped at Yaranush a very good Mediterranean grocery and picked up pita, olives, feta and tzatziki, gyros were a no brainer. I usually roast lamb to med rare, but DH wanted it more WD for the lamb gyro

Wow that looks f’n fabulous!! I wouldn’t have thought to use dill as generally I find it rather off putting. I love the garlic tucked into the meat, I do that with everything I roast. Nothing like cutting into a roast and coming into a clove of garlic that was baked right into the meat…of course I do not recommend kissing for 1-2 hour(s) and 2-3 gargles after eating.
If you don’t mind me asking, what was the size and what temp/time did you cook it for? I agree, normally I like my meat/lamb a perfect medium but I think for the gyro etc. I would prefer more medium well/well. Again it looks great, nice job !!!

It was 7.21 lbs, I didn’t have time to bring it to room when I put it in the oven,I wasn’t sure what time Marshall would be getting home so I roasted 275 convection took it out after about 1 hour 45, rested it for 15 to 20 and then blasted for a bit at 550 convection. Bear in mind my oven uses propane so it isn’t like normal gas cooking.
Actually the best lamb I ever made was for Christmas many years ago … I had to transport it to my sister’s house in the trunk of the car it was freezing out, it was cooked through to WD, but something about it steaming under the foil but cooling off quickly in the trunk made it actually fall off the bone tender almost like pulled lamb, it remained crunchy on the outside, it was killer. I have been unable to recreate it, but I’m on a mission now.
Since I will be going away for the holiday, decided to cook my Popeye Fried Turkey which has been in the freezer for a while. Defrosted for 3 days, In the convection oven at 350 degrees for almost 2 hours. did not cover it with foil as suggested after several reviews tho stated that it was not crispy when covered with foil ( SEE included who had to bump the temp to 500 degrees). After 1hour 45 min, skin was crispy, instant thermometer registered 178, took it out of oven. Perhaps, less time would do.
Gravy was 2 packages of chicken liver, chicken hearts and a package of gizzard. Browned them, then boiled it with an onion, garlic, carrots, celery, peppercorn, thyme and sage , simmered for 3 hours, strained the broth, half of the liver in the food processor, added it back to the stock, add red wine and some heavy cream and butter then tablespoon of sweet potato starch to thicken. I do not know what to do with the rest of the liver . I personally would add all the liver but had a guest over for dinner, do not know if he would object to the liver. My dogs would love them but I added an onion to the stock and worry about anemia sec to the onions as a side effect.
The turkey was crispy, the flavor was good all that spices, not the most moist turkey but with the gravy, it did not matter. HMMM have so much turkey left over, will probably make turkey and bean soup!
For vege, have left over french beans from last night, boiled for 8 minutes, shocked in ice water, then sauteed with olive oil ,garlic and served with lemon .
Resolution to the tune of 5%…Is perfect…Enjoy…

Just had my appliance guy over…my $4,000 Thermador Wall oven needs a new computer.
It is only 7 years old and really works well…
So $469 for the computer board and $195 for the service…Can’t cook in it until next week sometime when the parts come…
I guess the upside is that I did not have to buy a new wall oven!!!

My Dacor has a new computer as well. And a new seal. And two new heating elements. All but the computer, I was able to do myself.

Actually had a whole chicken to roast this afternoon…so I guess we are going out tonight…No roast chicken …
Our refrigerator has some food in it! Not as much as the old one; it takes time to accumulate that many bits and bobs. Dinner was a mushroom ragu over a soft polenta and a fresh, green salad.
I do the polenta in the oven. Someone posted this method over on CH and I adopted it as my own. For this software version, it is a ratio of 5:1 with a bit of butter and then at the end Parmesan cheese. Usually I use the stems of the mushroom to make a stock for this dish, but there were almost no stems, so instead, I used a bit of guanciale. It produced way too much fat so I poured most of it off. In fact, anchovies would have been a better choice. Anyhow, first I cook the mushrooms in a really hot pan to “roast” them. Remove mushrooms, cool down the pan a bit. Then add the oil, though in this case is was Guanciale, add shallots, garlic, deglaze with wine, add mushrooms and stock or water. At the end, I finished with a bit of butter and some lemon juice.
As we sat in the dining room, enjoying foods that needed to be chilled in order to store, the snow was falling outside. A perfect meal for a snowy and quiet night.

Just “filler meals” the past couple of days. Thursday pot luck lunch @ work along with our Yankee Swap. Came out ahead on my gift (along with coworker gifts - ended up with 6 bottles of wine! LOL) (two received today and not shown in pic below, taken Thursday).
Potluck meal on Thursday included meatballs in a bbq sauce; sausage bites in puff pastry, lil’ smokies in sauce; sausage and pineapple in sauce; pulled pork sliders; lasagna; Thai pasta salad; tortellini salad; “Apple Pie” sweet potato salad; regular potato salad; caprese skewers; traditional 7-layer dip; another 7-layer Mediterranean dip with feta, hummus, and artichoke hearts. There were probably several other things I’m forgetting. Desserts were black and white cupcakes, Christmas Crack, fudge brownies, gluten-free chocolate chip cookies, pumpkin pie, and a couple of other things.
Early release @ 2pm after a second potluck work lunch with some AHMAYZING brisket brought in by a coworker, along with leftovers from yesterday.
Read almost the first half of “A Wrinkle in Time” as I’d never read it as a kid. Should be able to plow through all 5 YA books in the series pretty quickly.
And since I didn’t have enough carbs over the past 3 days (spaghetti dinner/lunch, potluck with a shit ton of pasta, potatoes, and god knows what else), I decided to make Mac & Ham & Cheese tonight for my dinner as well as Mom meals. But crapola - no elbow noodles, so mini-wagon wheels stood in as a substitute. Don’t think Mom will mind.
Shit yeah, there was wine. It’s a mini-long weekend!

Friday is my late night at work so ordered a slice/salad/beverage special to eat at 5:00. Just ok but did the job. We are at the point where it is mainly desperate looking, frazzeled men coming in with no idea what to buy…or ones with very specific requests puzzled why we can’t source 12 emeralds and duplicate a bracelet the wife lost 10 years ago over night! Fun times. My xmas wish is that the circus cat can manage to make and bring me coffee in bed Monday morning. I realize I’m asking for too much! I can’t wait for Monday to have a day of total silence.
