The young chef came up with this meal for us, $40 per person. They have a menu which changes according to ingredients the chef gets from the market. This is the restaurant, 2 blocks or so from Jean Talon market. They make everything from scratch.
Tempura is not my thing but I gave it a go anyway.
They get the baguette right, here in Montreal.
Perfectly cooked baby squid. I need to use more lemon confit in my own cooking.
I like the subtle flavour of truffle.
Foie gras sauce is just enough not to overwhelm the tartare.
He has replaced skate wings with bream on his menu. I prefer skate all the way. Parsnip puree also has bits of green apples in it. The calvado sauce goes well with all the apple bits on the plate of course.
I was already full by the time this arrived.
Succulent spareribs and crispy fries.
The restaurant is small, the service is friendly and informal. The chef discusses the menu and brings you the food himself, explaining how it’s made and what’s in it. We have another “appointment” tonight and he wants us to sit at the bar to watch him cook.
That baguette! Oh MY!
The idea of Lemon Confit - Double Oh MY!!
That skate with Calvados Sauce - OH MY MY MY!!!
Those ribs and fries - Holy freakin’ OH MY!!!
I can’t wait to see what he concocts for you tonight.
And I’ve just printed off an Eric Ripert recipe from F&W, as well as one from Epicurious - the Ripert one uses salt/sugar on layered quartered lemons for preservation, although you only use the peel, the Epicurious one has you blanch the peel, and then simmer in an oil mixture, storing in oil as well. Not sure which would be better.
@aussieshepsx2 Thx for posting the sauce photo, I will see if it’s on sale here.
Tonight’s meal is cabbage ‘risotto’, an Ottolenghi recipe. I replaced the rice with orzo, and Dolcelatte with Golgonzola. I nearly wanted to skip the last step of deep frying the Brussels sprouts. Turned out much better than I anticipated, especially the crispy veggies add another dimension to the dish. Worth the cooking and the cleaning time. Even the carnivore at home said he likes the meal. (I hate deep frying, the cooking oil smoke and the lingering smell).
Not feeling well today - exhausted (too many overnight wake-ups over the past few days), some other issues, and a bad headache. Nothing much going on at work, so I took a half day. It was a gorgeous day, but I came home and napped on the couch for 2 hours. Will have to take a Simply Sleep tonight to ensure I get to sleep tonight after a long nap.
Dinner was simple–the Rosemary-Garlic-Lemon chicken cutlets from Serious Eats. Basmati rice and steamed green beans tossed with a marjoram-Aleppo butter.
Bacon, potato, pork , bourbon, maple syrup sausage from local butcher cooked on ci skillet . Delic … Leftover Rotkohl , and mashed potatoes with bone marrow black truffle butter .Wine to drink .
It’s like a warm summer evening outside . Marinating chicken legs and thighs in oo, rosemary, and garlic to throw on the grill . Finish off the leftover mashed potatoes , and Rotkohl . Watching the baseball game
Oyster shooters , Stouffers lasagna , leftover grilled chicken . Not much cooking going on . Ready to pop that bottle of wine and rock out . Happy Friday .
I’ve made some rather pathetic quick late dinners , yesterday was Ripe Avocado Day so i made a quick guacamole that i scooped up with a toasted sturdy pumpernickle.
I thankfully left the office at a decent time tonight and went directly towards wine with a friend. We nibbled olives and too hard little breadsticks, she had a late dinner thing to go to.
I picked up the fantastic homemade baba ganoush from the bodega near me on my way home, i wish they sold good pita too but no such luck. Snacky plate dinner with the baba, veggies to scoop it, sliced smoked tofu, pita chips, and a little more wine.
