Chicken pot pie , couple of fried eggs, and a bottle of red . Cleaned the fridge out . Packing my car at the moment headed up to Mount Shasta for R&R and fly fishing .

Pulled smoked turkey in BBQ sauce, 3 bean salad and fried stuffing.

The fried stuffing is actually a variant on a Southern German recipe called a Seviettenkloß. You press the bread dressing into a roll with a napkin, boil it, cut off cold slices and fry them in butter.

It’s delishus.

The pulled smoked turkey was pretty good too.

I tried 3 new things today: fermented shark, smoked puffin breast, and guillemot breasts. I saw many puffins and guillemots in Spitbergen now I finally got to try them.

Tender like sashimi, mild flavour.

The salmon in Iceland is especially good, just like those in Faroe Islands. Iceland has a lot of salmon in the streams and rivers and where there are waterfalls.

The sauce is “game sauce”.

Bad pic, but the meal was great! I made a kale, pancetta, and carmalized onion sauce to go over gnocchi. DH generally hates kale, but he deemed it the best kale to date.

The dog was very interested.

I had a couple of days off last week, so I did some eating out and more eating in.

Thursday night, I went to my home away from home, and had a couple tapas, including the Snowmen Tapa in the picture below. Serrano ham, small ball of goat cheese, more serrano, a ball of cantaloupe, and a half a grilled fig. Some scallops in saffron cream, and then a blackberry/hibiscus and mango ice cream dessert with pom arils and some pistachios.

Friday night was Mushroom Imperial Chicken (adapted from a 1959 Good Housekeeping recipe), served on leftover basmati rice and steamed green beans. (Excuse the pool of butter under the beans.)

Saturday I ended up with freezer diving after antiquing in the afternoon and getting home later than expected. A container of chicken & white bean stew was reheated, and served over leftover egg noodles topped with some leftover peas, and two slices of toasted and buttered sourdough bread alongside. Definitely a brown gloop meal, so no picture, but it was good. There was wine.

Sunday, I made a very non-weather appropriate meal - baked ziti with meat sauce. A crusty buttered rolls and a salad of red leaf lettuce, tomatoes from my CEO, sliced English cuke, chopped red bell pepper and shaved carrots tossed with a buttermilk Caesar dressing. Wine. No pic, because baked ziti never plates well unless it’s in an individual serving dish.

Gig Saturday night, so I made an early dinner of avocado, tomatoes and celery with soy-balsamic dressing. Split a tarte d’Alsace with my man post-gig.

Wingsover last night post-shift.

Tonight we also won’t eat until I come home from work (some time after 10 pm), but my man will have grilled the pork souvlaki that’s currently marinating - boneless country-style ribs cut into chunks and tossed with evoo, lemon juice & zest, paprika, cayenne, kosher salt, lemon pepper, garlic & onion powder, oregano & crushed rosemary.

Sides will be Greek lemon potatoes and maroulosalata.

Pork scallops topped with fresh sage and baked with stuffing, apple red cabbage, tomato salad with onion and lemon thyme, cucumber salad with kefir and fresh mint.

Going a little German tonight.

I’ve been a bad HO! lots of catching up to do with all your inspiring food. here’s a few of mine, lately, in no particular order…

Chaat masala salad (had no pom arils, sadly, subbed green grapes)
pork burgers with thai green curry paste
Lucky Peach’s ginger scallion sauce on noodles
Persian chicken and rice with barberries
rib eye and orange cauli mash
thai green lamb and eggplant curry
first try at chicken feet for broth - best broth ever!
congee with shredded chicken - also a first for me (making) - delish!
there were a few others in there, i’m sure, plus dinners out.

now, to catch up on your deliciousnessesssss…

so very jealous of this trip!

I don’t particularly like rice but I love savoury rice porridge. Even make it sometimes.

Have moved on to Quebec City and am now on my third day here.

Too many depressing desk dinner to mention lately… I managed to make a big batch of lentil veggie salad over the weekend as well as a proper meal of garbanzos con espinacas- made a ton of that too so i’m bringing one or the other plus greens to work.
Ugh.
When i get home there is a huge glass of wine for dessert lately…,

last night was a defrosted tub of enchilada sauce i made a while back, in which i cooked up some pork (seared and then pressure cooked in my new Instant Pot). Reduced a bit then, then dunked fried tortilla triangles in, ala chilaquiles, shredded jack over the top and then popped it in the oven to melt. topped with scallions, cilantro, radishes, sour cream and avo slices. need to make more enchilada sauce, it’s soooo good.

tonight i made this: http://www.bbc.co.uk/food/recipes/oven-roasted_chicken_13123, suggested by ex-CHers Gio and Joan Nagy, with lamb and chicken, because i had lamb leftover from last week that needed cooking. Great, super easy meal. i marinated overnight. the lamb turned out even better than the chicken.

On the side i made whole wheat couscous with pork broth, barberries, garlic, lots of buttah, piment d’Espelette, aleppo, (thanks, @WeezieD!) , toasted pine nuts, chopped up, wrinkly tomatoes, cilantro.

Also, a butter lettuce salad with radishes, feta, Weezie’s pretty little peppers that I pickled, feta, and a dressing of lemon, juice, sherry vinegar, a bit of dijon, and olive oil.

i am ONE WEEK AWAY from an 8 day trip to Paris!!
