Tonight’s dinner was Honey-Garlic Chicken Breasts over rice (green beans on the side - not pictured). The recipe is courtesy of Kitchen Sanctuary (youtube). It’s a fun way to use up my stock boneless skinless chicken breasts and everyone seems to like it.
A special thanks to the poster that started the whole “Blates” thread. These things are perfect for taking food to Neighbor #2. Everything stays contained & less chance of spillage. I put foil on top to keep the heat in (even though its a short walk).
Neighbor #2 likes that she can eat part of her dinner and re-heat the other part later (as these Walmart Blates are microwave safe). Presently, I have black ones and red ones, but I’m going to pick up more during my next trip to Walmart.
It’s Dungeness crab season here in the Bay Area and I got some cooked crabs from Costco yesterday. I made some crab cakes with them for dinner, along with tartar sauce, a crab salad stuffed avocado half, and some shishito peppers.
nearly midnight, took more than half hour to prepare (fresh caramelised onions…), about all of five minutes to devour, and a pleasure from start to finish
Sent the BF a recipe for a Vietnamese pancake with egg and crispy tofu. Voila - super creamy, almost cheesy inside. With a little kecap manis/sriracha sauce, and a side salad. And his Chinese sausage rice bowl with tamagoyaki.
So it turns out that bringing my salt consumption down just a little has already made a UGE difference in my BP - it’s come down 40 pts since i saw the Doc 10 days ago. Was it a fluke?? Did stopping nightly Chex-Mix really help that much?? Dunno. But Doc says all good for now, keep monitoring and let him know if it goes back up again. So I’ll be a little cautious, not go crazy again with salty snacks, but thank goodness no more bland(ish) food!
GREAT news! Hope it stays that way. I’ve been on a salt craving recently…pretzels, salted nuts, and Fritos. Just recently stopped, so hopefully the little heart speeders I’ve had recently back off.
This was a very busy work week. Getting home after a quick trip to MB after work (because no WAY am I going there tomorrow with snow AND the Patriots in the Super Bowl this weekend!), changing in to comfy clothes, and pouring a glass of wine for dinner prep was very much needed.
I went with a Friday night standard I haven’t had in awhile: steak tips with Ballymaloe steak sauce, baked tater with TPSTOB&SC (used some chive butter from the freezer with regular butter), and steamed green beans.
Wine? Oh yeah. Poured another glass to go with dinner.
I know, I know, I KNOW! I know my Mom’s been been hollering at me from the Beyond as well. So I’m back to trying to be better about it. Scooby Snacks are eliminated (they were being eaten after I had finished dinner! Go figure.)
