What's For Dinner #126 - the Hearts, Flowers, Candy, But It's Cold and Snowy! Edition - February 2026

Today was a better day. Funny how not being in excruciating pain can change one’s general outlook and disposition.

I was hoping to finally be allowed/able to drive again by Monday (which happens to be a major source of my income), but my surgeon gave me March 9 as the earliest date :roll_eyes: :roll_eyes: :roll_eyes: Bad news for me & my various clients, who’ve been rather desperately waiting for me to get better. I may just try to take the car around the block this weekend and see how it goes :face_with_peeking_eye:

@digga’s enlightening comment inspired me to hit up Ocean State Job Lot’s after my PT, where we spent a pretty penny on a fabulous haul, and where I bumped into a member of my local Fb cooking group who also doesn’t know yet what to make for our Sunday potluck :sweat_smile:

Dinner was chicken tacos to use up some of the abundant roti chicken in the fridge — mostly dark meat fried up in the chicken fat I’d saved from stock I made a while ago,

topped with quick-pickled red onion, pickled jalapeños, avocado, the last of the aji verde plus various hot sauces, and Sinatra.

I love the char I get on those flour tortillas :blush:

Pretty delish, if I dare say so.
