Digging around in the freezer I found 2 packs of what I thought was chicken scraps and I decided to make broth. I dumped them in a pot with water, btb, onion, celery and carrots. When I went to check on it I discovered one of the packs was half of a rotisserie chicken which was turning into shreds. I drained off the broth and saved a few chunks of breast, carrots and celery and packaged up the shreds for sandwiches, tacos? I decided to make a chicken noodle dish for dinner with the chunks. Sauteed leeks, garlic, mushrooms, the carrots and celery, dried tarragon, the broth that I thickened with corn starch and when everything was hot added the chicken and served over egg noodles with parsley. Salad was snap peas, red onion, radish, ranch dressing.
My own chicken avgolemono soup, with chanterelles, spinach, and brown rice. Served with diced scallion bits.

Campanelle with Squash, Walnuts, and Sage Brown Butter from “Anything’s Pastable” - delicata squash is roasted in the oven with rosemary. Sage leaves, crushed walnuts, garlic and red pepper flakes are sautéed in butter and used as a base for the sauce with pasta water, parmesan, lemon juice and zest as well as parsley. Everything is then mixed with the campanelle and finished with more parsley and parmesan
Sneaky BF cooked while i was at work today! First day I left him alone since surgery, he’s obviously doing just fine. Made himself fried rice with leftover korean chicken we had. I had (more than) a few spoonfuls, alongside my endive/walnut/cannellini salad.

Tonight I made Pati Jinich’s pozole verde with homemade broth. I took some liberties but still stuck with the spirit of the dish, I hope.
Tonight’s dinner was better than take out udon noodles with pork and cabbage.

The surgery went well (no doubt your well wishes & good juju you sent played no minor part ![]()
), but it took longer than expected, and so my PIC missed his first class of the semester — thank goodness for his TA ![]()
I have also been completely pain-free so far, thanks to the nerve block they shot me up with beforehand. However, that also means that I have absolutely no control over or sensation in my right arm, which is a really weird feeling & makes it practically a phantom limb for the time being. Beats excruciating pain, tho!
This also means that I am useless in the kitchen for the foreseeable future, and my PIC made us delectable grilled cheese sammiches with an obscene amount of cheese (Havarti, Raclette, and ultra sharp American for me). It was so rich I couldn’t finish it.
He also heated up some creamy tomato soup from TJ’s, pivoting from our original plan of cheeborgerz n fries — I just didn’t feel like a big dinner tonight.

Sunday night dinner: ham baked in orange juice, then glazed with leftover baklava syrup, fortified with extra ground cloves, and Dijon mustard, with about 3 oz of Meyer lemon jam. Also, homemade mac n cheese + slaw.
Pretty good! I’m a little sensitive to that “leftover” flavor in poultry – cooking thighs in rotisserie chicken broth and storing them separately might have given them a slight off taste. My DH didn’t notice at all. Still good!
Burning throat, runny nose, am I coming down with something? No just the rare super hot poblano pepper. Albondigas soup, extra sharp cheddar and pepper jack cheese quesadilla, avocado.
I made my guy a lasagna earlier. I’m enroute to Vegas for a quick tonight work thing. I made a PBJ for me to munch on the way to the airport. Probably going to pig out as much as possible with my free time. We are heading to Lake Louise for our annual Chateau stay on Friday, so lots and lots of eating and drinking coming up. Will head to Banff to watch some skijoring. Good thing I always overdue the steps in Vegas.
