That looks awesome! So festive.
Thanks, I was pleased with the way it turned, my first ever.
Thank you. Having mostly white plates and black countertops does wonders for presentation.
We were invited to our friends’ place for Christmas Eve – grilled swordfish, spaghetti nero alla puttanesca, and a wintery salad and homemade focaccia we brought. I provided sparkling, they poured a Chianti, and there was an assortment of cookies, some made by me and the kiddo, for dessert.
We hosted my friend for Christmas dinner. Our shared love of “snacky things” led to a glut of appetizers enjoyed in the afternoon with Prosecco. The meal was seared steak stroganoff over homemade egg noodles, green beans amandine, red wine cranberry-apple-orange sauce, leftover kale salad, and bread for anyone who wanted. French Carignane in our glasses. Pumpkin pie with home-roasted pumpkin and whipped cream for dessert. The pumpkin was a bit flavorless so next year we’ll buy canned. Chestnuts were also roasted over an open fire, naturally.
Your seared steak stroganoff has inspired a way for me to use some of the leftover SRR: I’m going to slice it up and serve it atop some pasta alfredo. Thank you!
More soup, kale/chorizo/bean and potato with homemade garlic/parm croutons made with some excellent pane cereali from a local bakery. The weather turned really nasty today, high winds frigid temps and blowing snow and sleet, so this def hit the spot.
Fancy fishy Friday night snacky dinner. Sesame-crusted smoked ahi tuna with crispy nori snacks for wrappers, local smoked mackerel pate on cucumber slices, sea trout roe on local soft cheese with dill, capers and lemon on crackers. So good! Beefeater’s and Fever Tree tonic on the side.
My kind of dinner ![]()
Did another freezer clean out:
A very large breast of a previously roasted chicken, chopped up, two small containers of chicken gravy, and two small containers of mashed potatoes (to which I added some potato flakes to counteract the excess water after defrosting).
In a large skillet, I sautéed a large chopped carrot, some onion, and several chopped up baby potatoes in some olive oil for about 5 minutes, then added frozen peas and corn and some chicken stock. The chopped chicken and chicken gravy were added, along with dried thyme, dried parsley and s/p. Let that simmer a bit, adding a bit more chicken stock and a sploosh of heavy cream near the end.
It all went into a baking dish, topped with the mashed potatoes and a bit of grated cheddar. It was put into a 375° oven for 25-30 minutes until bubbly. I let it sit out for about 10 minutes to settle.
Had a buttered crusty roll alongside, with a glass of wine.
Such a clever fix!!! Stealing it.
Yesterday’s Christmas focaccia. I used half 0 flour and half 00 flour . Hope everyone had a nice holiday. Cheers .
I made TPSTO turkey broth from the carcass I took home from our hosts last night. TBH I still haven’t gotten over the fact that they were going to toss the whole thing ![]()
It made so much broth I’ll be freezing a couple of containers after having used just a fraction of it for dinner — not to mention an entire salad bowl of turkey meat that fell of the carcass during the simmering process!
What a waste this would’ve been! ![]()
My boo is still ailing, so he’s just had a bowl of filtered turkey broth, whereas I added baby bok choy to mine and poured it over TJ’s squiggly noodz & some of the turkey meat. The perfect bow o’ soup for a day of freezing rain and sleet ![]()
Spiced up with some srsly hot chile oil & I was a verrrrry happy camper ![]()
Tasty AND frugal ![]()
Made a rough approximation of this Buddha bowl recipe with sweet potato, broccoli, cucumber, avocado, spinach, and no beans or carrots.
Sorry your PIC is still ailing but hopefully he enjoyed the turkey broth! Your bowl looks delectable!
Thank you! I really hope so ![]()
Yesterday’s holiday dinner with fam was a total surprise. Instead of the usual Roast Beast, there was…Swedish Meatballs! Very good!
Tonight back home to leftover ‘zaw from the freezer and romaine in Caesar dressing.
Met a friend at the mall for a one store shop. We then had dinner at a restaurant in the mall. We shared some Korean fried cauliflower, tofu lettuce wraps and fried mashed potatoes. A bottle of Veuve and a spicy margarita each. I Ubered so I didn’t have to worry about parking or lugging my coat around. Best money I spent.
Salisbury steak, mushroom gravy, mash with a butter pool. Panzanella salad. Potatoes were leftovers from the fridge, I had a dab of Brousin black truffle I added a la @GretchenS. More would have been better. Half of the patty went in the freezer, it kept growing as it cooked.
Special thanks to @medgirl for suggesting using summer sausage with pasta in the “tracking expenses” thread. I sliced and lightly sauteed the summer sausage which worked with some pasta and Ragu (jar) sauce. Tasty and filling!
