Oh my, I could face plant in that!
I was able to make up a pot of enchilada/soup meat from a chuck roast yesterday. I do it in the crock pot. Hubs took the carrots to work last night. I will make a soft taco for me tonight and my famous enchiladas tomorrow served with rice and pepper & jicama slaw for tomorrow’s dinner. We’ll see.
Was planning on making something else for dinner tonight, but got started late with making a meat sauce for my freezer.
So an easy switch to Sketti and Sawce for dinner, a crusty buttered roll, and a small salad (not pictured).
There was wine.
And the annual must-view of “The Sound of Music”. Required singing, although the boyz will grumble. Tough tooties, guys, Momma’s gotta watch!
Luscious cheeses gifted by a kind friend, toasted baguette and small cucumber pomegranate salad.
I once drove through Austria with Leslie. We made a bet that the first person to sing any Sound of Music song had to buy lunch. L lost within a day. “The hills are alive…” “Lunchtime!”
Yeah, I’d be that person too.
Most of today was spent reading NYers, chatting with my sis before the holiday craze, and looking out at the cold, but I still had a few things to pick up: dill for the gravlax I started this afternoon for xmas eve, plus a veg to have with our shrimp curry tonight. I decided on having my PIC make my beloved baby bok choy along with basmati rice.
Being an avowed shrimp & curry lover, this Goan shrimp curry recipe had been on my radar ever since @amandarama posted it.
I was surprised to find that the recipe included neither ginger nor garlic
, so I added both. I also added an orange bell pepper to the sauce just to up the kronch & veg content for dinner. I was also surprised at the use of lemon vs. lime juice, but perhaps that’s common in Goan cuisine — I wouldn’t know, being a bloody neophyte to it ![]()
It was a nice change of pace from my go-to Thai curries, and the dish had a decent heat level after I added more cayenne than called for. The fresh cilantro really made that dish pop. I would probably add MOAR garlic and ginger next time, however.
The bok choy had a strangely fishy, almost dried shrimp-y aftertaste to it that had us both baffled. My PIC changed nothing in the recipe. Huh. I snarfed it all up anyway ![]()
I made eggplant parm but forgot a picture of the final product. Here are some eggplant cutlets I had frozen last time, and the roasted tomatoes before they were sauced.
I’m going to be home alone the 24-27, so I made some grub for the freezer. Lots of time since the Bears beat the Packers yesterday, thank you very much. We headed to a new to us spot to watch the game. BOGO half off for appies. The three of us shared wings, potato skins, stuffed yorkies and some cauliflower wings. The food was actually pretty decent, so we will be checking it out again. Anyway, the freezer got a broccoli-Gruyère quiche, stroganoff without the noodles, a turkey pot pie and a lot of beef stew.
I started off making dinner thinking I was going to make Mee Goreng Mamak (Malaysian Fried Noodles) and then realized I really didn’t have many of the ingredients to do it justice so I ended up winging it. I sauteed garlic, shallots, Napa cabbage, frozen peas, a piece of a red bell pepper and half a jalapeno together with rice cakes. I made a multicultural sauce with ketchup, kecap manis, soy sauce, gochujang and Thai sweet chili sauce. A couple of eggs were stirred in at the last minute. It was surprisingly pretty good.
I made a spanakopita pie to bring to a friend’s for dinner. We also brought a feta-yogurt dip my DH made, croccantini, mixed olives, “hummus chick” hummus (all tahini - delish!), and purchased baklava. My friend made Serious Eats’ halal cart chicken with rice and salad. So good! I overdid it; everything was delicious and dinner was later than our usual Early Bird special.
Made “fried rice” with leftover pork tenderloin, egg, and vegetables. Pickled veg as a garnish. Chopsticks are my favorite, purchased in the 70s at Adventureland in Disneyland Anaheim.
Szechuan Chile Butter Shrimp, I added leeks, carrots and
brussels sprouts. Smashed cucumber and onion salad, mystery dressing from the fridge (labeled cuke dressing and tasted of soy sauce), sesame seeds.
A holiday treat: Swedish meatballs and gravy with smashed spuds, baby peas, and currant jelly. As usual, I added grated zucchini to the meatballs.

We enjoyed another outstanding dinner at James on Main, in Hackettstown, NJ, including pan roasted black bass with beluga lentils, sunchoke puree, and blood orange butter; excellent rabbit ragu risotto; duck spring rolls with peanut sauce; wood fired pork belly with pineapple habanero glaze; mushroom polenta; fries; and a fantastic blood orange cake for dessert. It all went great with a couple of excellent cabernets.
Four hour spareribs, the meat falling off the bone when I tried to cut them apart. Brown rice and lentils, crimini mushrooms.
Lamb Stew with Chanterelles and Carrots - simple prepared stew from the Larzac region with lamb leg, chanterelles, carrots, white onion, garlic, plenty of thyme and bay leaves just braised in water and white wine. Served over boiled potatoes
