Mr. Bionda had a cavity filled yesterday and still had a sore mouth today. So, a simple childhood favorite of his that was easy to chew - pasta (cavatappi, in this case) in tomato paste and butter. I zhuzhed up his mom’s “recipe” (literally just tomato paste and butter) with a sautéed shallot and garlic, a pinch of red pepper flakes and a handful of chopped parsley, and I caramelized the tomato paste for extra depth of flavor. Nothing mind blowing but an easy and tasty way to use up a half can of tomato paste, and Mr. Bionda and his tooth were happy. :grin:

Flounder, minimally sauteed in a cherry tomato reduction, brown rice and lentils.

I nuke cauliflower for about 5 minutes, add frozen corn and then nuke for another minute. Add a glob of butter and puree with a stick blender. Sometimes I add cheese.

Collard Greens Tacos with Pickled Apples and Walnuts from the “Dos Caminos Tacos” cookbook - for the pickled apples you heat up apple cider vinegar, water, sugar, halved jalapeno and pickling spices until the sugar dissolves and add thinly sliced Gala apples. Let it cool down for an hour and filter off the pickling liquid. Walnuts are getting roasted in olive oil and finely chopped. Sliced collard greens are sautéed in the walnut oil until slightly wilted and mixed with the apples and walnuts. Served on corn tortillas

I like @MadameC’s idea to shred the two veggies in a salad. Noted for next CSA growing season.

FWIW, we recently finished up the last jar of a carrot and kohlrabi fridge pickle I made at summer’s end. Unexpectedly refreshing as a combo.

Last night’s dinner was spiced up rotisserie chicken and weird looking arugula with cocktail tomatoes, cucumber and stuffed green olives. The arugula looks more like sprouts to me, but it’s pepper-y and the packaging says arugula :man_shrugging:

How’s your appetite these days with the O?

Seems that I’ve plateaued, appetite is back, but not what it once was. Haven’t lost or gained any weight after the initial 20lb lost. I think this is pretty normal so I’m upping my resistance training and I’m trying to get out for walks but it’s fekkin freezing out there :sob: + having panettone in the house doesn’t help much either :sweat_smile:

A family friend makes a Punjabi quick pickle in the winter with this combination, and also with cauliflower, that is absolutely delicious. I have to remember to ask her for it, and for the recipe!
