That is so nice and very thoughtful of you. I know Sunshine truly enjoyed the dinner. I like to make stuffing several times a year. It is so good with pork, too. And stuffing is too good to relegate it to only one time a year.
Last night I made ATK’s kung pao shrimp served over brown cauliflower rice blend with dry-fried green beans and steamed baby bok choy. My one change was to substitute Chinese sweet soybean paste for the hoisin called for in the recipe; I don’t like the 5-spice flavor in the dish at all.
Banana bar and decaf oat milk latte for dessert.
Tonight I made ATK’s Barolo [Zinfandel]-braised beef roast served with braised carrots and potatoes and steamed cabbage and green salad on the side. We are really liked this.

Apparently, if it hadn’t still be on warranty we could’ve had it back within a couple of days, but I guess this battery came all the way from Mars.
Dinner was a super-simple meal of last night’s leftovers — minus the smacked cuke salad, as I destroyed that for my late breakfast. Oops ![]()
I stir-fried the leftover mung bean sprouts, baby bok choy and broc florets in the wok before adding it to the nuked rice.

@Desert-Dan What a lovely and thoughtful idea to do an early Thanksgiving meal!
As you pointed out, you likely need things that don’t irritate the throat on the way down. I would be mindful of both textures and seasonings.
I’m with Sunshine on baby food / pureed food – I think you can get far with foods that are naturally soft.
My list after a tooth extraction also included things that didn’t need chewing and were lightly seasoned so it didn’t trigger irritation or a cough:
– Eggs: Soft scrambled (custardy) or as a steamed / baked custard (1.5/2:1 ratio with milk or water/broth) – similar to quiche filling, can mash or puree in a vegetable for some of the liquid as also cottage cheese, and can be sweet, like flan / caramel custard/ cheesecake. Eggs can also be swirled into chicken or vegetable broth like egg drop soup or creamed sweet corn soup or avgolemono.
– Soft rice dishes – soupy rice, risotto, khichdi (rice with lentils), rice pudding, etc
– Pureed vegetable soups (cauliflower, broccoli, squash / pumpkin, carrot / parsnip – base of onion, garlic / ginger, and “creamed” with milk or cream or even cottage cheese)
– Mashed root vegetables (with or without various things added – I think I had fish pie and shepherds pie along the way)
– Polenta / grits / semolina cooked completely soft in milk or water (can be flavored sweet or savory)
I didn’t eat any pasta, but little pasta like pastina, orzo, even couscous can be made soupy and swallowed without much effort.
If she likes yogurt, cottage cheese and ricotta, those work well both sweet and savory, and to enhance any of the things above.

I’ve used both WOL & SE recipes for Kung Pao, maybe give those a shot. Have also made this one. I’m surprised ATK included 5-spice.
Dead-of-winter is outdoor grilling season in our neck of the PNW. Summer wild-fire restrictions have us shut-out July through September. Thus, make hay – rain or shine – the rest of the year. We put a lamp out by the grill to facilitate things.
Hot wings on the Big Green Egg. Coleslaw in a buttermilk dressing. Celery sticks with homemade ranch.
It’s Tuesday. Birria tacos, avocado, radish, bread and butter jalapenos. Tortillas stared to split before I got them crispy and made it hard to eat, but they tasted very good. A Margarita and there will be Tillamook Espresso Chip ice cream for dessert.

Re leftovers — I have been known to eat it cold by the spoonful, but if it survives that, my mom makes a layered bake with bread or pasta, Pav bhaji, bechamel, and cheese that is quite delicious.
