It was a good day today. Got to meet an online friend I’ve “known” for 10 years for the first time.
Used nine more of the Roma tomatoes to make pizza sauce for dinner tonight. Sautéed 1 Tbsp of previously roasted garlic on low in olive oil, then added the chopped tomatoes and sautéed until they broke down. Added some of the oregano I had received on Friday, and some of my basil, some s/p. Let it simmer down a bit.
Pureed in a food processor and strained out the skin and seeds. Added some tomato paste, more roasted garlic, and Penzeys Italian herbs until it was at a good thickness. Lots left for future pizzas.
Sautéed mushrooms and spinach (separately) for a pizza tonight with caramelized onions, pearl mozzarella, cracked pepper and more basil after cooking for 11-1/2 minutes in a preheated 450° oven on a pizza stone.
Even on parchment on a pizza stone in the oven, not too shabby on the char on the bottom.
And tonight’s sunset after today’s rain. Again, not too shabby!
This began life as a pinto bean salad recipe with beef from America’s Test Kitchen’s The Complete Beans and Grains cookbook…and then I made the pickled poblano portion of it (but also added red onions) and decided to go in a braised bean and calamari direction. I got a really nice bunch of radishes with lovely greens from the supermarket today, so those went in the braise near the end. Also added some farro. This came out very tasty and we have leftovers for at least tomorrow (and possibly Tuesday).
I had to pass on a friend’s traditional lox & bagel & softball* bday brunch at a local park this morning. I don’t think we stayed up very late after coming home from the show — likely not longer than the length of the incredibly disappointing 28 Years Later, but I was def not ready to get up at 9:15
Our fishmonger had their monthly Sunday sale starting at a far more reasonable hour (noon), with 50% off frozen and 30% off fresh fish, and I got a nice supply of frozen fish: rockfish, golden tile, swordfish, cod, halibut. The cod was thawed to make an appearance in tonight’s twist on a favorite NYT recipe, with my version being less brothy, among several other tweaks. I’ve never managed to pan-fry cod without it falling apart completely, but I figured in a curry that won’t matter. It didn’t
I started off with a whole can of Maesri red curry paste fried up in peanut oil, along with extra lemongrass, garlic, shallot, and 8 Thai bird peppers before adding fish stock, coconut milk, Chinese eggplant, fish sauce & lime. The mung bean sprouts, soft tofu and cod went in last. Fresh basil and cilantro scattered on top for freshness.
Really nice, warming meal on a crisp fall eve, and there’s leftovers.

Finally found the ideal pasta shape, for me, to go with pesto. Casarecce mimics the shape of the beans that are a classic element of the green bean, potato, pasta, and pesto combo.
Time to use up the iceberg lettuce. Salad with garden tomatoes, cauliflower, salmon burger for protein , and honey mustard dressing.

Last night - Takeout BBQ. Sliced brisket, potato salad, coleslaw, Texas toast.
Tonight - Takeout steak fajitas and all the fixings.
I should get back to cooking one of these days.

A fun and delicious meal.
We enjoyed another outstanding dinner at Lula in Ridgewood, NJ, including Hamachi crudo with Charred Pineapple Broth, Avocado, Basil, Long Hot Pepper, Vidalia Onion; fantastic clam jam with Beer-Braised Littlenecks, Calabrian Chili, House Sausage, Espelette Butter; excellent crispy pork chop Milanese with Snow Peas, Horseradish, Mostarda, Pickled Red Onions, Grilled Lemon; corn panna cotta with Bar Harbor Maine lobster, Jimmy Nardello Peppers, Potato Chip, Herb Oil; amazing homemade focaccia with a crackling crust and whipped lemon butter. We took home a delicious lemon meringue pie for dessert. It all went great with an excellent cabernet and Shiraz.

Made gyudon tonight after not having made anything Japanese in a while. Pretty tasty, TJ’s shaved beef was tender. I used brown rice we had left over but I’d have preferred white. Used a prepared dashi soup base to which I still added some sake, mirin, soy, and sugar, and it was a little too salty, so I watered it down a bit.
Dinner tonight was a spring roll bowl. Shrimp, avocado and red pepper served over rice noodles. Butter tart for dessert.

Sunday supper. Spaghetti and meat balls with grana padano and parsley. Meatballs were 1/3 beef, pork, Italian sausage, s&p, granulated garlic, dried oregano, fresh parsley, egg and a little Italian bread crumbs and were roasted. Sauce was jarred, Rustic Cut Pasta Sauce with Roasted Garlic. It was good, I only added wine that I had used to scrape up the fond from the meatball pan. Burrata and tomato salad with oo, balsamic and basil chiffonade. Gold Nugget and Celebrity tomatoes from the garden. Toasted sourdough. A Negroni and wine.
Nothing wrong with jarred sauce. Like you said all you have to do is add a little red wine and scrape up the goodness.
Sometimes you have BigPlans™ for dinner, but then you have to modify, 'cause you need to take a trip to Urgent Care as your poor pinky is not healing, despite the steroids and the antibiotics. It matters not! The homemade sourdough discard focaccia… is beautiful. The balcony Pink Berkeley Tie-Dye tomato… is beautiful. The Farmdal cheese…is beautiful. Even the mayonnaise… is beautiful. Willkommen!
