What's For Dinner #122 - the Autumn Leaves of Red and Gold Edition - October 2025

Daughter 2 visited this weekend. She’s the last of my 3 daughters to go gluten free; has been doing it about 6 weeks and reports significant GI improvement. Last night we made pizza using King Arthur GF pizza flour (for her; I don’t eat lots of starch but I’m not gluten free). I forgot to photo…

Today for her dinner she made a baked rigatoni, because Rummo GF pastas were on sale. He made her own tomato sauce but used commercial cheeses.

[Edit - and obvs lots of leftovers to take back with her tonight for work lunches & dinners. She’s finding eating GF to be a bit of a hassle because she just can’t “grab whatever” at work and what not. I also walked her through GF sandwich bread so she can have the flexibility of sandwich lunches at work. I’ll toss that on onto the baking thread.]

I was afraid of the pasta going to mush (have had that happen before with GF) so I told her to boil it to a “very al dente” texture, and it turned out just great.

Here you go. I used a pound of collossals, 14 per lb. so had to adjust accordingly. Still used full amount of sherry. And when I said I cut back a little bit on the garlic I used maybe 3 cloves which is plenty for us. The 1 1/2 lb recipe calls for 3 TBSP. I also meant to add a pat of butter towards the end and forgot. You can definitely fiddle around with this recipe.

p.s. I don’t “brown” garlic.

I went to a matinée screening of the movie Eleanor the Great (meh) with one of my meetup groups then we went to a nearby Turkish restaurant for dessert/snacks. I got a chocolate lava cake which was probably the best dessert I’ve ever had but very rich. I wasn’t hungry enough for the fish curry I had planned for tonight so I had an oven baked basa fillet and a cucumber tomato salad.

After a meat-heavy weekend, I went a bit lighter tonight after getting home from Maine.

Dinner was a salad with red and green leaf lettuce, shaved carrots, sliced radishes, a sliced vine-grown tomato, and blanched green beans (ETA: and tuna!). The dressing was Heinz Salad Cream blended with Penzeys Buttermilk dressing mix.

I had a glass of wine.

I had picked up some heirloom apples at Cooper Farms Stand in West Paris, ME on the way home from my sister’s cabin this morning. Two new-to-me antique apples: Grimes Golden, and King of Tompkins County. Both seem to be right up my alley in crispness and flavor, and I had all expectations of making a couple of mini apple crisps for dessert when I got home. Yeah, no. That didn’t happen; I was too tired from the weekend’s activities and then the drive home.

So I made do with small slices of chocolate walnut and penuche fudge purchased at the Fryeburg Fair yesterday for dessert. I’ll figure out an appley dessert later in the week or next weekend.

I revisited Marathi Kolambi Bhaat - a pilaf of rice that is folded into a spiced shrimp and tomato curry:

Had band practice this afternoon for our show Thursday. It’s been a while since we last played, and I unearthed a few tunes we hadn’t done in forever, plus a couple of new tunes. Most of my dudes joined us for a sundowner beer at the brewery afterwards :sun: :beer_mug:

Dinner was marinated (olive oil, lemon pepper, Greek seasoning) and air-fried swordfish steak with ladolemono, choriatiki, and dolma. The latter two courtesy of TJ’s.

The OG plan was to grill the fish, but we were lazy. Came out really well — juicy and tender with crispy skin, and since it was over a pound of fish we have leftovers.

Not too shabby for a Sunday :slight_smile:

A big Meal Prep Sunday - done! All food prepped for this week. Tonight: Gratin of Beef and Eggplant (Bake Until Bubbly by Clifford A. Wright), Sautéed Green Beans & Quinoa/Chia Bread (Bread Toast Crumbs by Alexandra Stafford).

We enjoyed another outstanding dinner at Lula, in Ridgewood, NJ, for Mrs. P’s actual birthday. We enjoyed an amazing lobster pappardelle with saffron lobster sauce and wild mushrooms; venison tartare with pomegranate over a Belgium endive; hamachi crudo; clam jam, and the most amazing focaccia. It all went great with a couple of excellent cabernets.

Spaghetti with garlic, spinach, and parm. Uli’s mild Italian sausages. Chopped garden salad with tomatoes, peppers, cukes, and onions in a homemade vinaigrette. :+1:

Tried and true Italian sausage, onions, peppers. Made him a side salad. Toasted and buttered a sourdough English muffin for me. Darn, those things are addictive.

Knackered from cleaning and packing. Had an avocado sandwich on butter bread with Best Foods mayonnaise. Monster popsicle for dessert. Yes, I’m a kid at heart.

Kofte with Potato and Asparagus Salad - one of those dishes which in the end tasted very good but had some issues when making it - in this case the kofte kept falling off (and apart) the skewers when on the grill and in the end we finished them in a pan (but still got some good smokiness from the grill). The kofte were made with ground beef, red onions, garlic, thyme, cumin, pul biber and olive oil. The potatoes were roasted in the oven with convection in a mix of olive oil, paprika, garlic, cumin, chili powder and cinnamon. Once they are done, they are mixed with pan-roasted green asparagus, capers, olive oil, lemon juice and parsley

It’s sleep test day :grimacing: I took today and tomorrow off as sick leave mostly so I could go for a really long walk this afternoon to hopefully exhaust myself and also because I don’t think I’ll have enough time to shower and get changed before work tomorrow morning. The neighbourhood I went to this afternoon is usually decked out in Halloween decorations at this time of year but today I only saw two houses that were festively decorated.

Time for dinner! I had a soup using chicken broth with a little garlic and ginger added. I boiled some chow mein noodles, rinsed then drained them then added them to a bowl. I brought the chicken broth to a boil then added the last of the choy yum greens I had in the fridge and the last of the snow peas. I let them simmer then added them to the bowl. I felt like I was having The Last Supper :roll_eyes: The clinic I’m going to has been getting good reviews so I’m sure I’ll be fine.
