Ugh. Accidentally deleted…. again!
White bean and chicken chili, pickled Fresno chilis, grated sharp cheddar.
Saving room for a yellowtail crudo “snack” I’m working on.
Cheesy, twice-baked, French bread pizza (Kenji’s method) with homemade marinara, parm, mozz, and basil. Cream of zucchini soup.
For dessert, yet another fruit crumble: pears, apples, and blueberries.
Produce all from the garden.
Mushroom and Boursin pasta tastes just as good at Chez @BeefeaterRocks as it does at my house. Sister cooked and I supervised, which is my metier. Accompaniments were a baguette slathered in butter and a perfectly trimmed artichoke. I think I’m an influencer.
Pointer to Kenji’s french bread pizza?
Corn season doesn’t end! Good thing I had some steak to go with. After buttering and salting the corn, I sprinkled some spice blends on different parts: my sekrit rub, Mexican adobo, vadouvan. I liked my ancho-chile based rub the best, adobo next.
Oops - meant to include the link. Enjoy!
I headed out to the pricey butcher yesterday afternoon to pick up Thanksgiving dinner then off to the Polish deli nearby to buy dessert for last night and tonight. They had a whole tray of homemade paczki placed on a table near the door so you see it immediately on entering so I bought one for breakfast this morning. I was planning on making a stuffed squash for dinner when I got home last night but I had a 70 minute wait for a bus on the way there then a half hour wait on my way home. And this is a bus that usually comes every 20 minutes. I am still steaming but I digress. I was tired and hungry when I got home so I made a fettuccine al pesto and sliced tomato for dinner so the only pot I dirtied was the pot I boiled the noodles in. Then I drowned my misery in a piece of cheesecake.
Wow! That crudo looks great. Deets?
Our pesca buddy’s turn to host our weekly poker game. He made a delicious tomato-based seafood soup with cod and shrimp, and another friend brought a delectable salad.
Both my PIC and I broke even. Not the worst Saturday night spent with friends
Thank you! It turned out well. I think I used this recipe, only with capers for olives and sliced Fresnos for chili flakes.
Olives! Pistachios! Lemons! Say no more. That’s right up my alley.
Wanted more of a fresh bite and also to get rid of some of the veg in my fridge I made these rice paper fresh spring rolls. Sliced some cucumber, peppers, and carrots and added in marinated tofu slices with some rice noodles. Wrapped it up and used the TJ’s Thai Peanut dipping sauce!
Those look great & so fresh!
Chorizo and egg fried rice, embellished with chopped tomato, fried purple onions and kalamata olives showered with Parm/Regg.
Peas and rice (Arroz con Gandules (Puerto Rican Rice With Pigeon Peas according to Serious Eats)
To go with leftover pollo guisido.
Summer minestrone with the last vegetables from the garden. Very satisfying on a wet and breezy night https://www.theguardian.com/food/2023/jul/24/summer-minestrone-chicken-rice-recipe-rachel-roddy
Lazy-ish Sunday. Did a quick run for a client & combined it with personal shopping, i.e. the few things we needed for the coming days as well as tonight’s dinner.
The main event was leftover pork chile verde with extra hatch chiles, which we had with pan-fried tortillas, sliced avocado, cotija, limes & cilantro,
but I also wanted to make elote corn & needed crema and Tajin, the latter of which I had to run to THREE (!) different stores for ! Totally worth it, though. I loosely used this recipe.
Really satisfying, easy Sunday dinner. My only complaint is that it could’ve & should’ve been spicier — it being Spicy Sunday n all
My PIC’s killer margs to go with.
