Tonight’s dinner was a cauliflower curry with green beans and yellow and orange peppers served over rice. Visually more appealing than last night’s dinner.
We did a little rock shopping today, as we’ve decided to turn our front yard into a rock garden to prevent groundhogs and other critters from digging massive holes near our foundation. We chose Susquehanna skipping rocks, which are not only colorful, but local, too, and they reminded me of the rocks and stones on the Rhine river where I grew up
We’ll pep it up with a few flowers (likely Astilbe in various colors) so it’s not too bleak.
After my annual checkup we had delish carnitas & barbacoa tacos for lunch (since it’s Tuesday), then I drove my elderly neighbor to an appointment. I used the downtime before picking her up again to score a dozen ears of super-fresh corn from a farm nearby for $5 & gave her five of them.
Stripped 6 for freezing & made stock à la @LindaWhit & nuked the remaining ear for our ginormous dinner salad: iceberg, spring mix, local tomatoes, Persian cukes, celery, radish, green pepper, avocado, roti chicken, bacon & blue cheese — all tossed with augmented buttermilk ranch (garlic, shallot, lemon juice, s&p&s scallions & fresh parsley).
3 local HBEs I’d planned to add peeled so badly I turned them into a quick egg salad. Didn’t miss them with all the other stuff, TBH, plus we now have at least one future lunch.
Tried to recreate Monterey Chicken from a local Mexican place. Seasoned and grilled chicken breast. Melted MJ cheese and topped with fresh made guac. Doctored up refried beans. Buttered flour tortilla. Tortilla chips on the side with a dab of butter. Can you tell I like butter.?
King Salmon Caesar salad with butter-and-scallion roasted filets. Homemade dressing and croutons. Corn on the cob.
I’m stuffed.
Are you putting down landscape fabric before you add the rocks?
Mexican shrimp and corn salad. Shrimp were sauteed with adobo seasoning. Salad was fresh corn, sweet onion, tomatoes, avocado, cilantro, cotija cheese, a little oo and a squeeze of lime juice. Homemade tortilla chips.
Some Korean inspired tacos with pork bulgogi and slaw.

Sausage and fresh tomato pizza. The crust was a little flat. I think the old yeast in the fridge is too old.
Not we, personally, but the landscaping dude we hired will.
Kofte with Vadouvan Cauliflower and Pomegranate Vinaigrette based on a recipe from essen & trinken - kofte are made with ground beef, onions, garlic, parsley, breadcrumbs, egg, paprika, cinnamon and cumin and pan-seared. Cauliflower is pan-seared and finished with vadouvan. The vinaigrette is a mix of olive oil, white wine vinegar, pomegranate molasses and pomegranate arils. Kofte and cauliflower were served over yoghurt (just with s&p) and topped with the vinaigrette and parsley

We are decidedly not — save for the easiest, most “fool-proof” (yah, right) tasks.
BF and I watched a Chef John video re taking not-so-tender cuts of beef and cutting them in a diamond pattern (opposing cuts on either side that don’t go all the way through), to tenderize the steak. I bought a thick cut at our mexi-mart that is typically used for dishes with shredded beef, maybe a chuck roast? BF made the cuts, pan fried it, then made a butter garlic sauce with the pan drippings. Tasty steak! Despite what it looks like in the picture, it was pretty tender with a bit of pleasant chew still, and actually juicy and flavorful. Parts were a little overcooked but overall it was delicious. You can’t tell, but there were nice medium rare parts in the middle. I had a few slices with my TWO COTCs (because, Summer), and the BF had his with mashed potatoes with a butter garlic sauce lake that I stupidly forgot to take a picture of.
Off to Stinson tomorrow night for the yearly long bday bash weekend - tons of cooking, eating, drinking to come!
