A non-Asian dinner for a change - Pork ragu with fennel, Calabrian chili, and tons of parm regg, among other things, with ditalini. Pretty tasty.

My recs for Greek food in Calgary are out of date.
I haven’t visited Calgary since Nov 2019. I’m hesitant to recommend anything.
Medium-rare lamb chop, duck-fat fried Yukon golds, tomato/avocado/olive/feta salad. The fries didn’t quite work, didn’t crisp up, and I don’t think Yukons were the best choice. Peak tomatoes and ripe avocado were perfect, though.

Leftover NY striploin, 2 eggs side by each, grilled corn salsa/relish and toasted seed bread.
Early dinner tonight. Maybe because I had Covid for the last ~10 days, I was feeling nostalgic for 2020-something, so a not-so-oldie-but-goody feta tomato bake. Wonderful Maplebrook Farm VT feta/from my local farmstand: cherry tomatoes, garlic, habanero chili, basil, onion, Bread Obsession baguette, Magic Bites muhammara (out of view). Everything was local except for the olive oil and canned chickpeas. B went for 2 big servings.
Gussied up freezer find (a quart of Rancho Gordo yellow eye beans that had been braised with a ham hock and collard greens) to which I added cod, corn, and potatoes. Cholula at the table. A little bit of leftovers for tomorrow!
Everything looks great, and your bread always looks fantastic. Do you bake it yourself, or are you lucky enough to have an artisan bakery nearby?

Thank you! I’ve been in a mood tonight - I took a pork chop out of the freezer for dinner tonight but didn’t feel like it. And I didn’t feel like any other of the neals I planned for this week either… So tonight everyone else’s dinners look better.
If it’s any consolation. Everyone else’s dinner always looks better to me too.
Workout with my awesome PT this morning was great. Picked up my elderly neighbor from a dental appointment afterwards. Scooted to several stores to a) get more miles on that girl, and b) to procure the ingredients for tonight’s dinner: another rendition of the NYT recipe for pla goong. I had to hit SIX different stores for the lemongrass till I finally found some nice-looking stalks (or any, for that matter).
On that note…. 2/3 of a cup of lemongrass for ONE lb of shrimp seems a lil excessive. Pretty sure I didn’t use that much lemongrass the first time I made it, and barely managed to get 1/3 of a cup together. Seems to me that — between the makrut leaves & the lime juice, the tartness factor was well covered
I also decided to add a few crushed garlic cloves & Thai basil.
Came out excellent. 6 (!) bird peppers set our mouths afire… just the way we like it. My PIC made jasmine rice, veg was stir-fried mung bean sprouts.
We all have those moods, and as long as it tastes good and hits the spot, all is well
I had ice cream for dinner tonight because I didn’t feel like it toward literally ANYTHING in my fridge or freezer. So I hear you!
There are definitely some gorgeous looking meals posted here. Thank goodness I’m not competitive, right @BeefeaterRocks? I think if someone fixes something and then takes the time to share, it’s worth a like.
