Tonight’s dinner was tuna cakes, lemon garlic butter shrimp and scallops, tomato curry, jasmine rice, apricot coconut curry beans, and corn on the cob.

We liked the tomato curry. I’ll make it again. I had to make a few substitutions and omissions, as I couldn’t find my curry leaves, I was out of tamarind paste. I used yellow mustard seeds since I don’t have black mustard seeds.
