thought id play Melissa Clark or whatever riff and do a simple oven bake for my lovely fresh fish share - fluke aka summer flounder. I cut up some campari tomatoes and put them in an oven casserole with nice olive oil, half a can of cannellini beans (a refrig leftover) and some thyme sprigs. After 15 minutes of roasting at 425F I mixed in the skinny fluke filets, turning them over with a spatula with the bean and tomato mixture and adding some more fresh thyme oil and a couple of sliced up garlic cloves Cooked for another 10 min removed from the oven, sprinkled with parsley and served, The combo was great - only a little white wine might have improved.
Oh, how odd! I find the flavor actually gets more intense with a longer cooking time. Sorry it didn’t work out for you.
It could have been that the prep, a light tomato sauce (canned tomato and broth), lots of garlic, overwhelmed it.

Malaysian Fish Curry from “The Curry Guy One Pot” by Toombs - the base is build by pureeing shallots, garlic, galangal, ginger, lemon grass, jalapeno and shrimp paste. This base gets cooked with star anise, cinnamon stick, curry powder, tamarind paste, curry and makrut leaves, sugar, water and coconut milk. You subsequently add green beans, tofu puffs, cod and tomatoes. Served over rice

Started the day off with my PT torturing me in a strenuous leg sesh, then drove a few hours through the zoo that is our town until the cult leaves Sunday. A lucrative afternoon with almost no pain, which makes up for a late Airbnb request we got for this weekend…… today A little short notice for us to pack up our personal belongings and leave — never mind finding a place to stay for the next two nights.
My neighbor sent me a txt this morning to tell me how much she loved the kiwis Guess I’ll pick her up her own stash next time I get a chance, although she’d still need help peeling and cutting them. Thankfully I live less than 2 min away & would be happy to help her out.
Dinner tonight will be at Revival Kitchen with our gang for an early birthday celebration (mine). Looking very much forward to another good meal with good friends

We ate at a Greek festival tonight which was just ok and pretty expensive. Felt snacky later and made yo po mian with the wrong noodles.

I wanted a sort-of fallish meal (even though humidity and 80° heat had returned). I had some cremini mushrooms to use before they went mushy, so a boneless center-cut pork chop was seasoned with s/p and paprika and seared in olive oil and butter for about 3+ minutes per side.
Removed the chop and covered with foil; then added about 4 oz of sliced cremini mushrooms to the oil in the pan and sautéed for several minutes before adding a medium slivered shallot.
Sautéed more, then added 2 tsp roasted garlic, 1 tsp Dijon mustard and 1/2 tsp freshly minced thyme. Stirred it all in. Added just under 1 cup of mushroom stock (from a half cube) and let it simmer and reduce, adding a flour slurry to slightly thicken the sauce. Put the chop back in, covered. And finished cooking.
Served on leftover rice pilaf with steamed asparagus alongside.
There was wine.

Spiced lamb kofte with zucchini and shallots. Orzo with olive oil, lemon, and dill. Greek salad. Marinated olives and feta. Hummus.
Chicken salad, seasoned and sauteed blsl breast cutlet, mixed greens, green onion, celery, red and gold tomatoes from the garden, avocado, cambozola and ranch.
We enjoyed another excellent dinner at F1rst Restaurant, in Hawthorne, NJ, including halibut with pureed cauliflower and chardonnay beurre blanc sauce; grilled filet mignon with crispy Parmigiano-truffle fries, spinach, foie gras butter, tarragon chimichurri; crispy calamari and artichokes with roasted red peppers, kalamata olives, lime “Caesar” aioli; grilled octopus with potatoes, roasted red peppers, capers, olives, romesco sauce; It all went great with a couple of excellent cabernets.
