What's For Dinner #121 - the Daylight Slips Away Edition - September 2025

Thank you! I’ve been using a mix of Wondra, cornmeal, and Cajun seasoning (or a homemade approximation thereof) and then shallow frying in avocado oil set to medium high (8 of 10 on the dial) for 3 minutes a side. Then they drain on a towel. Seems to be working very well!

Met up with one of my gal pals for lunch at a cute little Georgian place just out of town, then took advantage of the downpour and drove for a bit. Unfortunately for me, the skies cleared up pretty quickly, and things died down.

Went to catch an early (and really bad) movie with a friend on Cheapo Tue$day (only $6/ticket), then picked up a couple of Detroit-style pizzas to catch the finale of Alien:Earth at home.

Pizza accoutrements:

Martinis and spicy Sichuan peanuts to go with, and a slice of chocolate honey cake I brought home from lunch for my PIC and me after our guest had left :blush:

I had a similar mystery affliction last month after going hiking. I found at the end of the day I had an itchy bit on the back of one of my calves. That itchy bit turned into a big seeping blister the next day for which I went to the doctor to examine. At the time, I thought it might’ve been a mystery insect bite. I went back to the same doctor two days later because at that point my leg had swelled from the knee down to twice the size of the other one. I started to think maybe it was a poison oak or something, even though Google reports none of that type of toxic plant in the area. Long story short, doctors had no idea what was going on. Prescribed some otc allergy meds, and $360 later as well as three weeks later things were back to normal. Gotta love those expensive shoulder shrugs and spaghetti at the wall throws from the medical community.

Thank you, it was a little different with the chopped brats vs bacon, but it seemed to work. Again, a good hot meal, which was my goal.

I served it with a little side salad (not pictured) and Sunshine had a piece of cantaloupe for dessert.

A bits ‘n’ bobs meal to clear out 5 small containers of stuff from the fridge.

About 1/3 of a small log of goat cheese was blended with a large spoonful of President garlic and herb cheese and the last of some heavy cream (maybe 1/4 cup?) and an additional sploosh of 1% milk for a sauce. Added some dried basil, oregano and parsley, along with some freshly ground pepper.

Added 1+ cup of carrots, peas and corn, and some chopped cooked green beans.

Leftover spaghetti and udon noodles from previous meals were quickly reheated in hot water, drained and added to the veg and sauce and everything was heated up. Topped with a light sprinkle of grated Parm-Reg.

Good dinner; have lunch tomorrow, and some empty space on my fridge shelves.

Tonight I made gochujang salmon bowls over quinoa-short grain brown rice with sesame cucumber salad, kimchi, scallion, and sesame seeds. Tasty! I came up with a creative way to broil salmon cubes without needing to skin the fillet first. It came right off before serving.

After yesterday’s late-night shenanigans I had to get up too early for another stem wave treatment. Canceled my PT afterwards and went pretty much straight to driving. Did that for a couple of hours until it got too uncomfortable, then picked up a few bits n bobs we needed at Wegmans & Aldi.

I’d had plans to audition for a local theater company’s various fall production projects tonight, but I was beat & not in the mood to spend 3 hours with randos till 11pm. There’s always next spring :wink:

Dinner was pleasantly low-key, yet delicious: leftover Thai shrimp curry over leftover rice, plus the yu choy I made up following this WoL recipe. I added fresh garlic, ginger & chili crisp to the sauce bc that’s how we roll, and topped it all generously with @LindaWhit’s favorite herb of them all :grinning_cat_with_smiling_eyes:

Did not expect we’d finish the entire plate of yu choy, but finish we did. I was really craving dark leafy greens today :face_savoring_food:

I forgot to add… This quiche recipe is from John Kanell (Preppy Kitchen), so I can’t take credit for it.

I would like to give credit to a Hungry Onion poster who gave me a few tips and tricks for the crust. I’ve forgotten who it was, but thanks, again. Although this crust isn’t perfect, yet – I continue to improve with each try.

Roasted salmon, seasoned with garam masala, mustard seeds, and s/p, couscous salad (based on yesterday’s broccoli slaw with mustardy dressing), and roasted green beans. There’s leftover salad and green beans for tomorrow’s dinner, which is a huge help!

BF really enjoyed this tonight, which is always good!

The Asiago/peppercorn pork loin I mentioned upthread saying neither of us really wanted it was actually pretty good. His favorite squash casserole. Mine too. Glazed carrots w/butter, brown sugar and apricot jam. That’s it!
