I haven’t thought about vareniki in years. My grandmother used to make them in the summer. They were a favorite. Thank you for the sweet reminder.

You are welcome! I try to make them once or twice during the summer with blueberries or sweet cherries. Blueberries are easiest to handle. :blueberries:

A couple of this week’s meals to close out our July. Cheese and charcuterie when it was too dang hot to cook. Shoutout to @Madrid, whose unrelated ice cream post gave me the notion that goat cheese and cherries are flavors that pair well. Indeed they do.

Then, glorious rain and a cool down made using the stove an option again. Time for locally made goat cheese and mushroom pierogi pulled from the freezer, with snap peas from our CSA share as a side. The big bowlful of snap peas garnished with basil and a dab of butter, not shown.

Up here in the Pacific Northwest were lucky to hit 72 most days. So not too hot. Wish it was warmer.

It’s late here for strawberries they must be the ever bearing kind. Glad you are enjoying our beautiful area!

Last night’s dinner - the last dinner for July - was tossed cucumber and tomato then pasta al arrabiata.

Do you have a favorite recipe you would mind sharing?

Sure!

For the dough, I like a NYT recipe (gift link). For the filling, either Natasha’s Kitchen’s blueberry dumpling, or Little Broken’s cherry filling.

FWIW: the cherry is a bit harder to handle. By macerating the cherries first, they get a little slippery, and the juice can smear onto the perimeter of the wrapper, making the dumpling harder to seal. It can be managed, but takes a little care. The blueberries, being used dry, have no such issues.

You are so adventuresome with your cooking. I would never have thought of adding mashed sweet potatoes to fried rice. I love both of them.
