Baked Shrimp and Orzo with Feta and Tomatoes - Browned orzo is cooked in a pan with red bell pepper, red onion, garlic, oregano, saffron, tomato juice and vegetable broth. Once you add diced tomatoes, peas, shrimps and top it with feta you bake it in the oven. Finished with some scallions.
We enjoyed another outstanding dinner at F1rst Restaurant in Hawthrone, NJ, including crispy veal chop milanese with burrata salad; halibut with cauliflower puree, mushrooms, and a leek sauce; octopus; mussels with bacon, sautéed shallots, and a leek puree. It all went great with a couple of excellent cabernets.
I cooked cod Sunday. I oiled the fish, I read that somewhere, had lots of oo and butter in a hot ci skillet. It still tried to stick. I saved it using my cleaver as a spatula.
Creamy Italian sausage and mushroom sauce over cauli, corn puree. Parsley. Tomato, cucumber, red onion, oo&v, basil salad. Mushrooms and sausage were sauteed in oo & butter, added shallots and garlic, a splash of wine, Alfredo sauce and Italian seasoning. It was ok, puree needed more corn. There was wine.
Thanksgiving in July!! I got up early and slow cooked the Turkey Breast I picked up earlier in the week. Neighbor #2 was overjoyed at my “Thanksgiving in July” meal. I gave her some extra turkey to munch on, as she is starting to get her appetite back and trying to eat more than one meal a day.
The meal was turkey, stuffing, brown sugar & butter sweet potatoes, corn, cranberry sauce and gravy. Really tasty and quite filling!!
I’ve made this a lot and love it every time: Spinach Maria, a gloriously cheese filled version of creamed spinach. We used it as a hot spinach dip with tortilla chips. Recipe:
That looks and sounds great! My first band’s guitarist’s former wife (talk about a mouthful) made a similar dish that was amazing, and she once made it just for my GF & me to take home. We basically polished it off on the drive home

A friend of mine used to make something very similar for our poker nights. She called it Roadkill. Spinach Maria sounds more appetizing, but we ate it anyway.
