What's For Dinner #120 - the Grilling Edition - July 2025


Too hot to cook inside, too bloody hot to cook outside, so an antipasti platter was in order.
Various cured meats, cheese and even some fruit made it’s way on to the platter.
There was some Saint Andre triple cream cheese, Parm/Regg, spicy Giardiniera, stuffed olives, tzatziki that needed to be used up, smoked Thuringer sausage, fennel pepperetts hot chorizo ,spicy dills and homemade crostini. Green grapes to cleanse the palate… :smiley:
I could eat this for every meal in the summer.

Woke up early (like 5:45) for no reason, which sort of made me cranky. I muddled through the morning with no clue what I wanted for dinner, despite a freezer full of choices. Decided to just go to Hannaford where I needed a couple of things I could usually only get there (and because I had a $10 off a $25 purchase coupon).

There were BISO chicken thighs that were on sale for $.99 cents/lb. Sold (even though I had some in my freezer…these were not frozen, so…).

Kept it simple: freshly minced garlic, rosemary and thyme mixed with s/p and olive oil, tucked under the skin and spread on top and baked at 375° in the convection toaster oven, basting occasionally.

Leftover rice was mixed with cooked carrots, peas and corn that was drained, buttered, and mixed with s/p and dried savory, and sprinkled with scallions after plating.

A decent enough meal. And there was wine.

Still home alone, still eating like a college kid. Loving it. Club bunwich with rotisserie chicken, aged cheddar and yummy almost burnt bacon. Made a stupid bet yesterday that my team would beat hubby’s… so I had to mow the lawn and clean the vehicles this morning. I’ll be nice and tired for a good sleep before the Chainsmokers tomorrow night…

It is now 1000 degrees Celsius or hot af in Fahrenheit. It is the hottest day of the summer and today is the day I made soup for supper. I think I lost my body weight in sweat and I had the air conditioner on :upside_down_face: So tonight I made dal and rice for dinner adding some beet greens that needed to be finished up. It tasted good but especially the beer I had with it.

We enjoyed another outstanding dinner at Cafe Panache, in Ramsey, NJ, including a beautifully charred ribeye steak; butter poached lobster with corn agnolotti; split lobster cake with shrimp with lemon risotto and lobster sauce; zucchini blossoms; coconut cake with caramel sauce for dessert. It all went great with a couple of excellent cabernets.

Third day of shorts and t-shirt weather. A bit much today, reached 100 degrees. Cooled off to 80 before dinner. Stonefire flat bread, mozzarella, pesto, prosciutto, artichoke hearts, kalamata olives, rpf and basil chiffonade. Spinach, red leaf, honey mango, avocado, red onion, v&oo dressing. Icy Beefeater rocks, lemon twist olives.

ATK’s grilled chicken kebabs.

Chicken thighs marinated in tomato paste, vegetable oil, garlic, a good quality fish sauce, and just a bit of sugar. Tasty! As far as the recipe goes, it’s perfect summer grilling fare, with bonus points for minimal effort. I still would prefer cooking over flame, rather than gas grill, but you take what you can get.

Served with steamed rice and chopped salad.

I’m just confused by the clam shells…

You baked whole clams on the pizza, then removed the clams from the shell and discarded the shell, as you ate the pizza??

Trickery. Sautéed the clams , then added to the pizza . Calamari salad made beforehand, then added . Yes , you eat the clams off the pizza using your hands . Its a fun tasty Pizza.

Another hot AF day in Not-So-Happy Valley. We took a road trip to a dealer about an hour away to test drive a Honda scooter, as we are now a one-car fam & def need an extra vehicle to get around town. Compared to my Vespa back in Berlin it almost seemed toy-size to me. The pickup isn’t anywhere close to it, either, and it only comfortably seats one person. It is also about 2K cheaper than a Vespa we are planning on checking out on Monday. In the end it will be up to my dude what we decide on, since he will be the prime driver of it (unlike my scooter in Berlin :motor_scooter:).

Our buddy was nice enough to host a poker game to get us out of the house. We each lost 4 bucks, but the distraction was worth it. Delivery from the Sichuan/Japanese/Chinese/Thai place that took forever to arrive: cumin beef,

Impromptu dinner party and playdate with friends last night. They are trying to save $$ so we scrounged ingredients and collectively came up with enough to make palak paneer (with a splash of cream) and coconut curry chickpeas (more spices, minus spinach) with brown rice, naan, red cabbage slaw with mango and chaat masala, crispy tofu, and cucumber raita. I broke out a bottle of Riesling from our Finger Lakes trip last summer. Delicious and fun. They also brought s’more chocolate chip cookies, which were way too good.
