I made a Salmon, Quinoa & vegetable pot pie. I used a bechamel sauce as a binder and for some flavor. It was OK. If I try this again, I’ll have to tweak the recipe a bit more.
Tonight’s dinner was a salad followed by spaghetti with arrabiata sauce and chowed down while watching Vanderpump Rules. I’m feeling @Roy 's need for trash tv this week.

Thank you! BF thought it was a little on the too hot side, but I thought it was perfect. Calamari get a more meaty and savory quality during a longer braise, so it worked well with the Xi’an flavors. I was really happy with it!

Simple and tasty penne with hot Italian sausage in Mutti tomato/basil sauce, showered with Parm/Regg for dinner tonight.
Dinner tonight was a salad of nice crunchy vegetables. I used broccoli, cauliflower, carrots and yellow pepper. The dressing consisted of evoo, lemon juice, anchovy paste and garlic.
I made a grain bowl with a base of olive oil-dressed bulgur topped with feta-brined grilled chicken breast, roasted butternut squash and chickpeas (spiced with smoked paprika, coriander, and onion salt), grilled beets, baby greens, crispy cubes of Mexican frying cheese, Smitten Kitchen’s red cabbage slaw with dates (minus the feta), avocado, tahini-yogurt sauce, chopped pistachios, and crispy shallots. Really tasty and interesting to eat.

I’m sad I was yakking too much to remember to take pics. Had friends over and served a whole roasted spatchcocked buttermilk-garlic-thyme- and salt-brined chicken that browned up beautifully, roasted new potatoes, spring carrots, and shallots that I served with lots of dill, a nice FM salad, with TJ’s zhoug and toum on the side for dolloping. They brought a huge bowl of wonderful raspberries from their garden that we had over ice cream. Easy dinner and looked pretty on the plate. Leftovers!!

Proper Friday Night steak tip dinner!
(You didn’t REALLY think I was going to say “confession”, did you? Yeah, no. I don’t roll that way!)
Been a helluva week, so I needed this. Wine to start, then a pan-seared steak tip seasoned with olive oil and s/p and cooked to medium-rare. Sliced, with Ballymaloe steak sauce drizzled on top.
Half a small baker, with TPSTOB&SC and chives from from deck garden, and steamed asparagus.
There was another glass of wine.

We “needed” to get some grocery shopping done at Aldi and Sam’s (mostly an excuse to get out of the house), and we’d originally planned on catching a matinee showing of 28 Years Later, but everything took longer than expected, so we drove out to a farm nearby and shared a banana split instead, which is the only appropriate use for bananas IMNHO — with perhaps the exception of banana cream pudding, or turned into a frozen dessert topped with chocolate sauce and nuts.
A tentative HH with friends at their place didn’t materialize, and that was just fine with us. We’re pretty low energy and ok with staying home tonight.
I finally made the piccata with wild-caught cod (I already had all the ingredients in the house), sautéed spinach with garlic, and my PIC contributed his lovely pilaf. The cod once again stuck to the f’n pan and turned into hash, save for one piece. Maybe I should use a non-stick pan in the future, but if someone has a secret to avoid that from happening, I’d be glad to hear it. I got the pan & oil very hot, the fish was dry… didn’t matter.
The sauce initially wouldn’t mount after having reduced the wine & adding the lemon juice, so I cheated with a little sprinkle of cornstarch that thankfully did the trick.
The spinach turned out fab & my PIC’s pilaf was comforting. Sinners on the big screen tonight. Finally!
