What's For Dinner #120 - the Grilling Edition - July 2025

That’s a perfect lobster roll. Simply lobster meat mixed with a little mayo… Bun buttered and toasted. Bacon is a nice addition, not necessary but nice.
Homemade lobster rolls are the best and the most cost effective way of enjoying them.
It’s soft shell season if that matters.

Second good dinner in Peniche at Marginal https://www.instagram.com/marginalrestaurante_peniche/?hl=en directly at the coast with a nice view in the sunset and towards Berlenga Islands. Perhaps the only small complaint would be that for the first time the service was quite rushed (normally not an issue in Portugal)

We went out to hear some music / explosions on the 4th, so the 5th was our grill night. Impossible burger for me, possible burger for him, potato salad, local corn, cukes. I made the buns with sourdough discard and they were terrific.

Thanks! Around as usual. Just haven’t been posting on the regular due to lots of garden work. Most days of late, meals get thrown together fast.

Salmon and tomato pasta salad with a mayo based dressing flavored with saffron, lemon, garlic, and dill. Improvised, but delicious! Lots of leftovers for lunches for BF.

After pretty devastating news from the vet (specifics to be figured out after an ultrasound on Thursday), neither of us felt like eating much of anything. On top of that, my dude is dealing with a bout of diverticulitis, so very low-key food & not much of it was in order.

At least our dear friend was able to pill our little monkey boy with the anti-nausea meds, which will hopefully help him eat more. He is currently sleeping off the assault on my pillow :heart:

I made us miso soup with a little smashed fresh ginger I fried up in peanut oil, then added hot water and a bunch of white miso. I thought it was still a bit bland, so I added more before tossing in a nest of Chinese noodz. Poured all that over some soft tofu with dark soy sauce and scallions.

You know where this is going: another bowl o’ salt from the salty chef. I finished the cukes from last night.

Today was my first day back in the office after a two week staycation. I’m exhausted! Four more days to go… Dinner tonight was a salmon fillet and a kale salad.

Not a healthy dinner tonight. Sautéed some sliced smoked sausage in olive oil. Drained but left a little oil in the pan and added corn off the cob, chopped onion, jalapeño Cajun seasoning. Fried potatoes on the side. One thing I learned from my late MIL. Cut the potatoes up, whether they be French fries or fried potatoes. Salt and pepper. Then toss with a little bit of flour. Get a crust going.

Gochujang Burger With Spicy Slaw, on a toasted seeded brioche bun. Honey mango, avocado, orange mini bell, red onion salad with Nước chấm dressing.

White Pizza!! Chicken & Onion pizza with a bechamel sauce. 2 slices for me, 2 for Sunshine and 2 for Neighbor #2.

I wasn’t sure that one could use a bechamel sauce on a pizza, but this was really good!!
