Last night I had a beef asparagus stirfry. I blanched asparagus then put it aside. I then heated a little grapeseed oil in a fry pan and added some beef stirfry strips. I added a little nger and garlic then some soy sauce, shaoxing wine and rice vinegar then put the asparagus back in the pan until heared through then served over rice.
Tonight we had dinner built around the aji verde i made the other night. The BF made a tortilla de patata (he doesn’t use as many eggs as i do so it turned out a little flat, but still delicious) just so we could eat up that magical green sauce. He fried some queso fresco, made a salad, and on my way home, i passed through our FM and found a new food stall selling papas rellenas - a Peruvian and Bolivian specialty. Basically, a mashed potato ball (or in this case, an oval) stuffed with stew-like concoction of ground beef, sliced HB egg, carrots, raisins, and an olive, gets the egg and flour treatment and is deep fried. Came with two sauces that were too sweet for our taste, so we instead slathered the aji verde over everything. I don’t know why a Peruvian stand doesn’t have the green stuff!
Tonight I made a big pot of Hot Dog Soup (recipe from Glen and Friends Cooking - YouTube). It’s a great way to stretch a small pack of hot dogs into 6 portions (3 meals for the two of us). This soup is quite tasty, not to mention filling!!
I felt like having spaghetti carbonara, but I had leftover fish and veggies. So, leftover cod and salmon, haricots and artichoke hearts, over whole wheat spaghetti carbonara. I added porcini cream to the egg and romano, and shredded myzirthra on top.
Eating delicious awful food is a terrible reward for eating healthy moderately sized food. That said, I play these games too. But I’d rather not call it a reward because that’s setting up the wrong psychological incentive. Instead call it a sometimes treat that is part of an overall healthy and undeprived lifestyle… just my 2. My reward for every 10 lbs (soon to hit for the 4th time) is a board game bc I love em. My big reward if I lose the full 75-80 that I want will be a gas range to replace my electric. Been dreaming of that for years. Good luck!
Another day at the beach. Never seems to get old for this beach bum at heart
Given the lack of reliably good places within a half hour drive, our small appetites, and in anticipation of several restaurant visits for the remainder of our Sicily sojourn, we decided to have another dinner al fresco on our patio.
Our landlord had left a pack of linguine, a cherry tomato sauce, and some Mutti passata, so I made some pasta for us. I flavored olive oil in a skillet with a few smashed-up garlic cloves and RPF, added the sauce & a little Mutti, plus a bunch of basil leaves for MOAR flavor. Local grated cheese on top. Without my spiffy long pasta portion measuring tool I was worried I’d not made enough linguine, but thankfully I had
You have a lovely view for sure and it looks like you’ve been eating well I’ve never been to Italy but I’ve been to Paris and the cheese is by far much better than what we get in Canada. The cheese and croissants alone were worth the trip (Also because Paris is a beautiful city.)
Can your catsitter send you pics of the chonkster?
I don’t think of a burger as awful food, it’s a healthy balance of protein, carbs and veg. Since I only had to lose 6ish pounds I don’t think I need to worry about setting up the wrong psychological incentive. Brava to you for finding something that works for you and I wish you continued success.
Another week in the books, another cheeseburger for dinner…
Toppings included, pickles/tomato/grilled onion and a slather of HP-mayo. Caesar salad with homemade sourdough croutons on the side, showered with Parm/Reg.
Mrs. P made a pizza topped with Andouille sausage, fresh figs, ricotta, mozzarella, Parmigiano Reggiano cheese, and hot honey, using a Stonefire thin pizza crust. It went great with nice Zinfandel.
