OK, this looks like something I’d like with lentils! I don’t have chorizo, but I do have rounds of semi-spicy salami “nuggets” I got at World Market in my freezer that I could use. Adding it to my TBM list. Thanks!

What a fun, historical theme!
Two nights ago we had a sort of treat dinner for ourselves. The roomate had 36 hours off and bought the goodies. Boneless rib eye, baked russets and Caesar type salad.
The bakers were of the 1# type, too big! so we ended up splitting one. The Caesar salad was from romaine we had on hand as well as the homemade sour dough croutons. He had his drenched with store bough balsamic vinegar dressing. The roomate is of the ‘a little salad with my dressing’ mindset. Mine was drizzled with homemade fig balsamic dressing. The spectacular rib eyes grilled on our modest Weber gas grill were just about 1# a piece. I think his eyes were larger than his stomach when he went shopping. I am trying to get him comfortable with shopping in a grocery store and he’s showing great strides in shopping skills for something other than tools and model trains.
So we split one rib eye. The other went to steak salad last night and maybe for a sandwich today. At $16.98/lb (unheard of in my experience) it was a good deal for 5 possible servings.

When I saw the article about the SEA market in the Inquirer this morning, I remembered that we still had two unopened packages of sausage in the freezer from our last visit in November
They came in handy, as we still had a buncha bok choy and napa cabbage from Saturday’s hot pot dinner in the crisper, and I’ve been enjoying our thriftier meals lately.
We thawed one of each (a salty/sweet one & my favorite, sai oua) and cooked them in the air-fryer bc they exude a LOT of grease. TJ’s veg stir-fry was augmented with a couple of scrambled eggs & the crisper veggies. I added the 2 shrimp from last night’s shrimp cocktail, too. Despite having added 5-6 Thai bird peppers, it wasn’t very spicy. We added some of that magical kumquat hot sauce to remedy
Cheap & easy, just like us
Bunch of stuff I canned/froze/preserved myself:
- Chicken corn soup I made and froze last September
- Pesto salad dressing with pesto I made and froze last august
- Canned local peaches from 2023. Still terrific.
Tonight was yoga night and I went back! Apparently we are doing ashtanga yoga and the students have been learning to do moves like “the butterfly”, “thread the needle” and “the sphynx” (too hard for this old gal). I have ressigned myself to the fact I will have to do chair yoga because I am not flexible enough to keep up with the younguns. Post yoga dinner ws a pork chop, potato and butternut squash, both veggies served with a TPSTOB.
Tonight the highly recommended Red Argentine Shrimp. @gcaggiano. Kept it simple, sauteed in garlic butter with parsley. Very good indeed, tender and sweet. A piece of warm baguette to sop up the butter, red leaf/little gem lettuce, red onion, Kumato, orange baby bell, Castelvetrano olives, Manchego cheese salad with sherry vinegar/oo dressing.

Its not quite lobster but I find it to be far ahead of regular shrimp.
With Potatoes being the only thing on sale this week, I had to use up the potatoes I had in stock. So, I made up a potato, vegetable, chicken soup. I had a chicken breast (packaged alone) in the freezer, so that got shredded and added in. It added a little flavor and texture to the soup.
Spelt Bowl with Green Vegetables and Parsley Hummus - spelt (soaked overnight and then cooked) was the base for this bowl. Toppings were parsley hummus (quickly blanched parsley pureed with chickpeas, lime zest and juice, tahini, garlic, yoghurt and olive oil), romanesco (blanched), napa cabbage (raw), edamame, red onions, cilantro, avocado, toasted sesame seeds with a vinaigrette made from olive oil, sesame seed oil and lime juice
Start of a four day weekend.
Very late dinner after a longer cardiac rehab session with a “class” after exercise, so it had to be quick: pork tenderloin roasted in the oven with olive oil and Penzeys Tsardust Memories seasoning sprinkled all over, and plum ketchup spooned on top.
Steamed buttered green beans.

Grilling season is here in the PNW. Mid-sixties temp and the cherry trees are in bloom.
Food-cart style chicken kebabs on homemade pita, with chopped salad and a tangy yogurt sauce.
Meatballs, salad. mac and cheese, Greek-style white kidney beans. Lingonberry sauce on the side.
All beef balls, with a nod to Alton Brown’s Swedish meatball recipe. I added allspice, nutmeg and onion.
Chicken katsu, homemade Tonkatsu sauce. Bok choy and carrots stir fried in a wok with oil, garlic and ginger. Cabbage salad with miso sesame vinaigrette.
Pankoed halibut with leftover carbonara, asparagus. I made a mistake re-heating the carbonara, too hot in the microwave, so the custardy sauce became scrambled egg. Still good.
Spaghetti with Shrimps and Kale - kale was quickly blanched before sautéed with almonds and fresno chile and than mixed with spaghetti and pasta water. Shrimps seared with cajun spice mixture. Everything is mixed and finished with some olive oil
My PIC was busy on campus all day, so I took the opportunity to do a lil spring cleaning in anticipation of our impending departure (only 2 more weeks!).
It was my recluse friend’s bday last week, and we’d made plans to get together to celebrate at a nice small plates / cocktail place. She picked me up en route, and we were joined by my dude just as we’d sat down at the bar. He’d already had a martini with his colleagues & was therefore rather peckish. We shared an order of fried oysters with yum yum sauce,
smoked lamb lollipops, and fries.
The oysters were plump and juicy, but I would’ve preferred a slightly lighter batter. The lamb chops are reliably good, as are the fries, generally, but last night they weren’t as crispy.
Our friend ordered a house burger & shared half of it with us.
It was cooked perfectly, and her fries were as crispy as they should be. Drinks were a decent Paloma & a couple of martinis.
The bar has a great view of the street, where throngs of decked out sorority girls and frat boys were heading to some sort of special function. Watching the girls try to walk in ridiculously high heels made us laugh & my feet hurt in sympathy.
We were home by 8:30pm
