What's For Dinner #115 - the Dumb Rodent Month Edition - February 2025

I like your style with the mac on the side of the salad! I had leftover tortellini alfredo with a salad yesterday too!

“I’m sure, Madam, that I have no idea what you’re talking about.”

(Buffs nails on vest, again)

“Chuckles evilly ‘muwahahahaha’!”

Scene cuts to me whacking away with a knife on (subprimal of the day on sale).

Oh, wait, that actually reminds me. My cleanest beef tallow yet. My daughters 1 and 3 say “yes, we can tell it is oil based, but we can’t tell what oil”.

My next try will be even cleaner.

Got a surprise text mid-day from my elderly neighbor, who’d blanked on an appointment & needed a ride 20 min later. Picked her up when she was done and went straight to the supermarket for fruit and salad fixins.

WFD was another ‘using up bits n bobs from the fridge & pantry’ meal: fried up the remaining 2 mild Italian sausages, removed them, sautéed very finely chopped leeks in their fat, added a few crushed garlic cloves, tomato paste, a splash of open rosé, cooked that down, added a glug of Rao’s marinara & put the sausage back & added a splash of heavy cream, let a couple of handfuls of baby spinach wilt in the sauce before adding the last of the paccheri, which once again took much, much longer to cook than the 12 min alleged on the package — but this time I was prepared

Really delish, and just a small portion leftover.

Salad of sunny crisp, cuke, avo, flavor bomb tomatoes, pumpkin seeds & buttermilk ranch with fresh parsley, garlic & lemon juice.

I couldn’t resist a little scoop. But yeah, much more plant focused recently.

Last night’s WFD was steak and salad. Delicious meal, but terrible photo and therefore I didn’t post.

Tonight’s WFD is English bangers, with mashed spuds and baby garden peas (from frozen). Heinz beans and HP sauce optional.

Dinner started with a Salad of Peas — snow pea leaves, snow peas, petite peas.

Then onto Steamed Chinese-style Chicken with Black Mushrooms, garlic bok choy, tangy wood-ear salad, tingly lotus root salad, and rice.

Potatoes with eggplant, what an intriguing idea. Method?

Fish fried in panko, I can’t remember whether it was Pacific snapper or rock cod. Tartar sauce. Mac & cheese from the freezer. Spinach, hbe, bacon salad, sweet & sour dressing.

Here is the recipe I use, I’ve modified the spicing that Sunshine & I like.

Thank you for the well wishes for Sunshine. She is still dealing with a very minor complication/issue from the surgery, but slowly but surely it is healing.

Dinner tonight was peanut butter noodles with cucumbers.

Pibil pork tacos. I tried making the tortillas today on a cast iron pan rather than ceramic nonstick, which gave it some nice brown spots.

Those tortillas look like everything a tortilla ought to be. Mighty impressed.

I made honey-ginger tofu (+ Chinese black beans, less honey) with carrots, asparagus, and broccoli added. Served over brown rice with crispy Sichuan cauliflower and pozu cucumber salad.

My dood left for a talk in KC this AM with a connection through Dulles. Naturally, his flight was delayed leaving our convenient but incompetent airport

He missed his connection & had to get a much later flight, getting him into KC at 8:30 CT. Apart from the overall annoyance, he also had to nix plans to get together with a buddy from grad school. I’m doubly glad now that I decided against coming along back in November when he booked everything bc obviously, the host wasn’t going to cover my ticket, plus it’s really not the ideal time of year to be exploring downtown in search of BBQ — although the meat sweats might’ve kept us warm

Thankfully, @MrGuyGuyGuy & @tigerjohn had a few suggestions for restaurants open later than 9pm, so we’ll see if he lucks out somewhere.

This bachelorette, OTOH, greatly enjoyed not leaving the warm house for even a second today & taking care of some house chores.

Bc of a very late lunch, I decided to forgo last night’s leftover pasta and just had a big ole salad for dinner: iceberg, napa cabbage, sugar bombs, cukes & toasted pumpkin seeds w/buttermilk ranch.

Briefly discussed gilding it with fried up KOS or bacon, but didn’t want to deal
