“However, I’ve clearly not perfected the air-fryer method, and didn’t want to risk a dry AF piece of fancy fish.”
I think the AF is a never ending lesson. Thought I had pretty well mastered it, but cooked two small Wagyu beef strips this week and overcooked it. Of course, being Wagyu, it was still delicious - just could have been more delicious. Here are pics of the dinner. My back was acting nice that day, so I was able to cook a good dinner. Had to improvise on the canned sweet potatoes AND canned asparagus (trying to use up canned stuff I bought during my COVID panic). Had no fresh of either, because haven’t even purchased groceries recently. To the sweet potatoes I sprinkled lots of brown sugar, cinnamon and coriander (wanted ginger but couldn’t find). The slightly chilled asparagus was barely edible. Slab Iceberg Lettuce Salad was good and crisp.
I hope the overcooked Wagyu made up for the canned asparagus. I have terrible memories of being served boiled white asparagus in brine from a jar as a child. I guess with Germans’ obsession with the veg, someone thought it might be a good idea to preserve it so we can eat it ALL year long.
It wasn’t until I had fresh white asparagus that I realized, I too, love it. But only in season, and def not out of the jar.
I wanted to give the air-fryer a break & also didn’t want to stink up our pad again… although stir-frying in hot oil with garlic and chilis is likely to do the same. Ya just. Can’t. Win.
The sun came back today, as did balmier temps. Def not complaining about that
I bopped around South Street, mostly to grab new cat grass for Mr. Chonk, then hit the Viet store on my way home for frozen shrimp & baby Shanghai. I was in the mood for a shrimp stir-fry à la WoL’s shrimp & broccoli in brown sauce, just with extra fresh & dried chili peppers & Sichuan peppers that I saved from my favorite snack, Sichuan peanuts
Cheeseburger & chips. Tomato, lettuce, onion and BBQ chips for him. Thought about making onion rings but just didn’t feel like going through all that for two people. He bought a couple jars of pickles the other day. One is called Dragon Candy made with Carolina Reaper pepper flakes. Omg, he’s welcome to the rest of the jar as far as I’m concerned. The other one labeled Spicy I can tolerate. But not by much…
Nice . I remember being in Cologne. Walking up the steps to the top of the cathedral. More importantly It was the city where my favorite all time beer is made . Kolsch . Tasted so good.
I grew up just south of Cologne. There are 30 Kölsch breweries in the area, and friends of mine once decided they were going to try to have all 30 of them in one night. Despite the small servings (roughly 7oz pours each), they didn’t get past 15 — which is still impressive!
What is likely the last fresh zucchini pizza of the season. Chopped salad, with what is definitely the last garden cucumber of the season. Bittersweet to see it all come to an end for another year.
Pizza made on ATK’s skin with homemade basil pesto, grated parm, whole milk mozz, fresh mozz, and shredded zucchini. Baked in a 550-degree convection oven on pre-heated stone for about 9 minutes. Served with homemade pickled peppers.
Stopped by one of our Chinatowns this afternoon, which yielded some starters for dinner at a friend’s — spicy beef and pork pancakes, and char siu pork.
Dinner was fish topped with tomatoes, capers, and olives, tomato and mozzarella salad, and sautéed mixed mushrooms.
For dessert I had taken mille crepe cake from a bakery I like, and my friend had picked up molten chocolate cakes from a new bakery in their neighborhood, plus vanilla ice cream. I also took a lemon Swiss roll, but we never got to it.
