Best part of this recipe: heating the skillet in the broiler. I did it for about a half hour.
Worst part: remove skin. I did not and did skin side down in my cast iron pan and it got crispy
Served with an arugula salad just dressed with oil and lemon - some lemon over the fish. Delicious.
Chicken enchiladas with poblanos, onions and garlic, green enchilada/salsa verde sauce, cotija cheese and cilantro. Corn, red onion, tomato, avocado, cilantro salad, oo&v dressing, sprinkle of chile powder. A margarita.
I love bluefish unreservedly and want all of that right now!!

Bucatini with a garden tomato-basil sauce (parm and red pepper flakes for serving). Uli’s Mild Italian sausages, roasted. Caesar salad with homemade dressing and garlicky croutons.

Thai inspired Chicken Curry with Eggplants - First you make the spice paste by pureeing garlic, scallions, lemongrass, serano chili, ginger, makrut lime leaves, thai basil stems, fish sauce, corn starch and brown sugar. Stir fry diced chicken breast and then sliced eggplant before cooking both and the spice paste in coconut milk and chicken broth. Finished with thai basil, lime zest and juice. Served with jasmine rice.

I made some that we carbed in a keg and back sweetened with reduced to cider syrup. It was good! We used champagne yeast.

In honor of National Mushroom Day I made Smitten Kitchen’s garlic butter roasted mushrooms and used a wonderful baguette-shaped sourdough ciabatta from a new to me bakery to mop up.
Tonight I baked off a tray of cottage pie Aldi, product of Canada (labeled “shepherd’s pie” as @Phoenikia has described). Side of steamed broccoli with lemon pepper and Greek olive oil. My kiddo went crazy for the pie!
We have a trickle of water! Should be pressurizing in the next few days
