What's For Dinner #108 - the Start to the Second Half of the Year Edition - July 2024

I had those oddly flavorless Costco lamb chops in the freezer, so I made a braise. I browned the chops and braised them in tomato, stock, red wine, oregano, garlic, a tiny dash of red pepper flakes, and just a few drops of my sekrit umami ingredient, fish sauce. Into the oven for 1.5 hours at 300F. I moved it to the stovetop, added butter beans and orzo, stirring so it wouldn’t scorch. The chops were tender and juicy in that sauce., and the texture of the butter bean-orzo combo made my mouth happy.

Potato salad: hbe egg, celery, red onion, mission olives, whiskey cornichons and peppadew peppers, mayo and sour cream dressing, “dusted with paprika like my Ma used to do.” @PedroPero. Sour cream and onion chips, bread and butter jalapeño pickles. Mon Dieu, jalapeño crack. Someone posted this recipe and I can’t find the op to give credit, whoever you are, Thank You.

Dessert was an orange creamsicle. I made a syrup of frozen oj concentrate and triple sec, poured it over French vanilla ice cream and added a splash of blood orange Italian soda.

He’s a very social and affectionate cat, and very vocal (that’s the Snowshoe). That pic’s not from our arrival btw, but it unflatteringly emphasizes his fluffy proportions :smiling_face_with_three_hearts:

Oh, and we had a tenant in our house in May, then friends alternatingly hanging out at our house for June. My keyboard player’s partner is a pet sitter & in love with him.

Our show went well. As expected, it was hot as ballz, but at least there was a steady breeze. I had a (clearly neurodivergent) heckler/fan who kept yelling all kinds of compliments and proposals at me, but I handled it with my natural charm :wink: Apparently, he did the same to the chick who performed before us :joy:

We got in touch with friends bc of course we’d made no plans for anything, having just gotten back into town & still being jet-lagged zombies. They hadn’t made any plans either (our mutual good friend is down with the ‘rona), and were happy to host a small get-together on their beautiful new patio.

We munched on Caprese, melon & prosciutto, guac & chips, and later grilled very good cheeseburgers and dogs. We’ll have to try some of their other burgers available at our supermarket, where my PIC had grabbed a red skin potato salad that was also surprisingly good. The guac was too smooth for my taste (I prefer it on the chonky side), but I guess it depends on who’s making it on any given day. We were too busy catching up and planning our escape to a better place, so the only pic I took was of my hot dog on half a bun with French’s mustard (duh), ketchup, and raw onion.

We left them to catch the fireworks, which were gorgeous but much shorter than usual (less than 30 min), where we also bumped into one of our favorite bartenders.

Yes, it’s summer, but time for two takes with homemade chicken stock yesterday and the day before. Andrea Nguyen’s quick chicken pho, then a mild (for my now-sensitive tummy) laksa. On the balcony and feeling healthy!

Never seen them, I’ll stick to the pickled version.

Burger (mix of pork and beef, scallions, ginger, soy sauce, roasted sesame oil) topped with sautéed baby spinach (cooked with roasted sesame oil, sriracha and toasted sesame seeds). Ketchup mixed with sriracha)

Last night - made the tiktok clay pot (sans clay pot) pepper beef BF made a couple weeks ago, but added soft tofu and jalapeño, omitted all the black pepper, upped the white pepper. I used SRF thinly sliced wagyu beef - turned out super tender again.

Yes. I highly recommend the recipe I used. I didn’t add the cloves , I hate cloves.

Dinner was all over the map, spicy spicy beef patty, hot Italian sausage, pickled veg and the last of the potato salad. Gotta use it before you lose it.

I add just a dusting of ground cloves to my Rotkohl (instead of putting those nasty mofos in whole). It’s like nutmeg — a little bit goes a very long way.

A surprise this morning that Property Mgmt hadn’t warned owners about: painters coming back to the complex to fix window trim that needed repainting around the complex. Could have been interesting if I had exited the upstairs bathroom after my shower and found a face peering through the sheer curtains in my bedroom. A surprise for me AND the painter! :flushed:

Had Ataulfo mangoes from TJs to use, and picked up some pork tenderloins from MB on Wednesday.

Chicken burgers on the BGE. I used a modified, handle-less, cast-iron pancake pan for cooking. To the (home-)ground chicken thigh meat, I added minced scallions, parsley, cumin, red pepper flakes, salt, and pepper.

Toasted buns with mayo, ‘merican cheese, pickled scallions, and shredded lettuce. Carrot slaw to go with.
