What's For Dinner #108 - the Start to the Second Half of the Year Edition - July 2024

We’ve had a bad day on several fronts. Being lazy tonight. Shopping the freezer and the pantry. Mama Mancini’s meatballs, Mezzetta’s three cheese red sauce and Rao’s spaghetti. We have stuff for a salad but neither one of is up for it.

I really ought to look into stuff like this. I’ve liked the notion the few times I’ve run into it, but personally the only thing I’ve done is mushroom hunting as a kid and young man.

My sister once served us a salad that had 3 or maybe 4 nuisance edibles from her flower/plants garden area. It was really good, and she’d done the research to know what was both safe and fairly tasty.

I made a couple more recipes from the Gunpowder cookbook - Etti Masala (South Indian Style Shrimps) and a salad of wheat and lentils (they called for bulgar and moong dal; I used farro and masoor dal). I’ve linked the thread with my write up of both recipes. This was a wonderful meal!

We are eating a LOT of ice cream lately. My DH took his last bite of dinner tonight and said, “I want soft serve.” He couldn’t convince the rest of us, so he settled for an ice cream sandwich leftover from the weekend’s lemonade stand.

Dinner itself was a quickie shortcut General Tso’s chicken, which despite being assembled from Aldi ingredients is better than local takeout options. We had ours over cauli-jasmine rice with steamed broccoli and chili crisp.

Summer finally arrived in our little corner of the PNW. Blue skies, warm temps, and a ten-day forecast promising more of the same. A day spent clam digging, cherry picking, berry picking, eating ice cream, and cooking dinner barefoot. It’s all good, man.

Chicken diavolo with garden Caesar. Peach frozen yogurt for dessert.

Happy Canada Day!
Tomato pie, without the crust. I bought the tomatoes on my day trip to Kingsville, Ontario yesterday.

And homegrown lettuce, homegrown mint, and Kingsville green onion salad.

I won’t bore you with photos of the Italian sausage and squash.

BF made me a big ol’ salad for dinner tonight, to which I added a bunch of chopped up steamed brocc after the pic, because I know how to live!

One would hope that it would be a clear reminder that elections have very far reaching consequences, but….

Also that.

I made some spinach and ricotta ravioli over the weekend using a mold and had some today for dinner with a sage and brown butter sauce.

I had a bag of potatoes about to go south, so I made potato soup. I tossed in some peas and carrots just to add a little color. I froze half of it for a later date. Kind of a boring dinner, but I did use up the potatoes.

Toasted sandwiches for dinner — potato, chutney, cheese and ham and cheese.

Also butternut squash soup and beet salad.
