Sole casserole, with rice, mushrooms, and peas. Topped with toasted garlic panko. Sometimes you need comfort food (and leftovers)!

I LOVE this commercial! And we have/had several Mikes in our office, and I would say “Mike, Mike, Mike, Mike, Mike!” when I needed their attention. LOL

Took out a boneless center-cut pork chop last night to defrost, but didn’t want to just grill it.

Thinly sliced it, tossed it with 1 tsp or so of cornstarch and about a 1/2 tsp of s/p.

Sauteed some chopped onions, red bell pepper, and green beans over high heat in hot olive oil for a couple of minutes. Tossed in a lot of minced garlic, and splashed with about 1/4 cup beef broth. Added the pork strips and at least a tsp of ground ginger, adding another 1/4 cup of beef broth with some white wine to sauce it up.

Drizzled some Mike’s Hot Honey over it all, stirred it in, and served it on leftover Basmati rice, with a sprinkle of sesame seeds on top.

Quite good! And there’s a big glass of wine I’m working my way through, natch.

And a bonus pic of da boyz this morning. It ended about a minute after I took the pic when Finny jumped down from the bed, walked into the bathroom where I was, and pulled open the cabinet door under the sink to climb in and sit in the dark. Such a weirdo. :smile:

Dinner tonight was gnocchi with a bolognese sauce and steamed asparagus on the side.

Oil-roasted BC King salmon with lemon and allium. French-style potato salad - with bacon and onion – in vinaigrette. Garden asparagus on the gill-pan with dill butter.

Nope. They tolerate each other, for the most part, but they still beat each other up after every dinner meal, and other than once, they’ve not curled up in the cat bed together, the way Finnegan and Alfie used to, and Alfie and Buster before that.

I made khichdi for my nephews before I left (they have the most bizarre requests sometimes :joy: — for me when I was a kid, it was sick food, for them it’s comfort in a bowl) which bizarrely made me crave it as well.

So I made some for myself tonight, using a mix of masoor dal and yellow moong dal and a special starchy rice my mom uses only for khichdi (same idea as arborio).

Started the meal with a snow pea and arugula salad (yay SOTD! feeling good each day I remember to make one).

Also roasted a piece of salmon with the mustard paste from the cookbook Gunpowder.

Rounded out with 2 kinds of crunchy papad (the pinkish one starts out bright purple because it’s made from ragi / finger millet).

Vietnamese inspired shrimps and brussels sprouts - shrimps were cooked in coconut caramel sauce made by reducing a mixture of shallots, garlic, molasses, fish sauce and coconut water. The brussels sprouts were first charred and then cooked in some coconut water before finishing with soy sauce

A mental health care day of sorts, mostly spent offline. BUT I finally got to pick up my scooter – “only” 5 weeks into our 8-week sojourn! She’d been pronounced dead before we even got here, but a different shop was able to fix her up with a new engine, which will hopefully provide several more years of scootin’ around the city :partying_face:

The brand-new engine requires me to not drive any faster than 25-30km/h for the first 300 kms, which meant a verrrry slow drive from one end of town to our hood. But she’s home with us :heart:

A lil beat up after 18 years with a few scratches & dents, but let’s be honest – aren’t we all? Life, man :woozy_face:

Meanwhile, my PIC tested positive for covid today (YAY), so any restaurant outings for the weekend will have to be postponed – never mind that he’s also feeling like shit after a terrible night of staying up coughing, the poor guy :cry:

Delivery of spicy food FD to the rescue, specifically: 2 orders of smashed cukes

and two orders of biang biang noodles – one with eggplant for which we ordered extra beef,

one with cumin lamb.

The beef came in a separate container in a wonderful broth, and it was again meltingly tender and flavorful AF.

Couldn’t finish, as the portions are generous, and those noodz are filling. In fact, we didn’t even touch the second order of smashed cukes. #midnightsnack?

Rhubarb schorle to warsh it all down. Best NA summer drink ever :smiling_face:

Hope my dude gets better sleep tonight, and that I don’t catch his crud. Tomorrow is another day, as they say.
