Baked clams, my first crack at these. I was gonna have them half-shelled, but I didnât have the strength to shuck today. I did have the strength to steam and chop and mix with panko, though.
Tonightâs dinner was Chicken Meatloaf, stuffing and carrots. I had made a small test serving of this chicken meatloaf experiment with a bechamel sauce, but neither Sunshine nor Neighbor #2 liked having any sauce on this creation. So⌠I served it plain (I did put some hot sauce on my portion, though) At the end of the day, everyone was happy and enjoyed dinner.
I like red pepper jelly, cranberry sauce or lingonberry sauce with chicken or turkey meatballs. Theyâd all work with turkey meatloaf, I think.

There are hot red pepper jellies , and sweet red pepper jellies, as well as green jalapeĂąo jellies. I usually buy one that has a bit of kick.

I mostly buy Canadian brands. I sometimes buy this American one you should be able to find near you. Itâs also good with cream cheese or brie. Or pork chops

Well, I did take a couple of bites of my PICâs cheeborgah at the brewery⌠then we had a few friends over @casa lingua after festivities were done & we practically closed down the place

I discovered I donât like Pacific snapper / rockfish
I was excited to make something that wasnât char, salmon, haddock, pickerel, halibut or cod. Haha.
Also found out a person Iâm cooking for doesnât like rockfish, so Iâm glad I made the ravioli. Not a lot of shrimp flavour, but these Marina Del Rey shrimp and burrata ravioli were tasty, with a very thin egg noodle wrapper . I liked them better than frozen lobster ravioli Iâve tried.
Iâm curious - what about it did you not care for?
We love it panko-crusted and pan fried in tacos.
Years ago I would enjoy it with some Russian friends frozen raw, thinly sliced, marinated in vinegar and onions, then seasoned with a pinch of cayenne to taste. It made for a refreshing ceviche-like dish (along with obligatory shots of vodka).
It might be my source and the fish is not fresh enough. It wasnât off, but it wasnât delicious. Iâm located between Lake Huron and Lake Erie, so awfully far from Alaska.
I can see it being fine battered or breaded, and eaten inside a taco. I think I overcooked it a bit (roasted). I suck at deep-frying and frying fish.
I canât use salt at home anymore for health reasons, and the rockfish I had would have benefitted from salt.
Understood. If it wasnât fresh, thereâs probably a lot not to like.
