Gambas al Ajillo starting with Kenji’s recipe https://www.seriouseats.com/spanish-style-garlic-shrimp-gambas-al-ajillo-recipe. After making the seasoned oil and draining it off I added cherry tomatoes and then spinach to the pan briefly, once the cherry tomatoes had popped and the spinach was slightly wilted I removed it from the pan and continued with the recipe. Plated the shrimp and its oil over the vegetables. Delicious!

Yes! I thought it was great. Should have made more.
Beef and carrots from Sunday. Added peas, leftover roasted taters and served over egg noodles.
Perfect early November dinner.
General Tso’s roasted cauliflower and kung pao honey nut squash with celery over brown rice. Pork egg roll.
Had picked up some crab cakes at Aldi last weekend as a potential “I have nothing thought out for dinner…oh, these will cook fast!” dinner option. Combo real and fake crab. And “fish flakes.” I REALLY should have known better!

Yeah, that’s a nope. Barely crispy on the outside, even after some additional time in the toaster oven, and all squishy on the inside. Into the bin they’ll go.
The remoulade I made of mayo, seafood sauce, Wickles pickle relish, and horseradish was good, as were the L-W fries.
There’s chocolate or cookies, so I’m good.
Crab cakes are so hit or miss. Sorry yours were a miss.
I know fake crab tends to be mushy, but I was hoping these might work. Too much fake and flakes, I guess. Price point should have tipped me off, but I was at the end of my shopping on Saturday and didn’t put a lot of thought into it, when I should have.
