What's for Dinner #100 - The WFD Big 100th Edition - November 2023

Unexpected bonus round of summer produce, thanks to corn and tomatoes harvested by the CSA before a hard frost hit this week. Made a vibrant sauce for eggplant and mozzarella ravioli from Valicenti Pasta Farm (local product).

We had a nice out and about this morning, including some outstanding Greek food.

So dinner tonight was a bowl of organic barley and vegatable soup we get from Costco and some saltine crackers. And a glass of wine. DH had Cheerios and bananas. Both hit the spot~

A classic meal: meatloaf made with 1-1/4 lbs of ground 80/20 beef and 1/2 lb of ground turkey, a beaten egg, Worcestershire sauce, dried thyme and parsley, s/p, and Panko crumbs. Baked at 350° with Plum Ketchup on top.

Super sour creamy mashed potatoes and buttered peas.

Wine.

I adapted the Hayashi Stew from the Morimoto cookbook to my slow cooker (way less posh - supermarket choice chuck in place of the Wagyu and the remnants of a Bota Box Pinot Noir for the wine, More Than Gourmet brown stock and chicken demi in place of the Shanton and chicken stocks…ok, I guess I basically made my own beef stew at this point :rofl:). I wanted to get a make ahead dinner put together before I went out (finally!) for my COVID booster. We had it with baked potatoes stuffed with Jarlsberg, scallions, and garlic and some roasted carrots. There is enough beef and potatoes for leftovers tomorrow. Later in the week, I am going to get some mushrooms and have the last of the gravy with those and some noodles (maybe with sour cream).

P.S. I had NO reaction to my Pfizer booster this time around (got it last weekend). Got my first RSV vaccine 2 days ago on Friday and while I expected something in a reaction, I only had a sore shoulder.

Thank you! The weather today was better than earlier in the week, but there’s still that chill in the air that says “stew weather”. :laughing:

ETA - Arm has mostly been sore from the Moderna. I’m tired, but that could be the time change as much as anything else.

I had a couple nights of insomnia. It appears a few people dealt with insomnia.
Not that big a deal… just did some reading (at night).

Two sets of friends over consecutively after a bbq festival. Lots of snacky things and drinks and no photos. I think I’m done with meat for at least the next 12 hours.

Pat - @Bigley9 - thanks again. I made this tonight for my MIL and wife (I had to delay 1 day off plan, due to an appliance issue at home) and did your additions of the cherry toms and spinach.

They loved it, loved it. I served it with a roasted garlic herbed bread.

We’ll probably be sweating garlic for a day or so, but that’s all good.

Yes… I read that too. Something about that strain and the booster that triggers insomnia.

I’m not the best sleeper to begin with, so anything that upsets my system and I’m wide awake.

Thin crust Meat Lovers pizza with extra sausage(the guy who answered the phone was a little confused as to why I would need more meat on a ML pizza. I didn’t have the heart to tell him they were chintzy on the meat to begin with) and garden salad courtesy of Pizza Hut. Ken’s Caesar on the salad and since he hates cucumbers more for me. Zoom in for red pepper flakes and small packet of “grated cheese”. Not bad. Not bad at all.

We enjoyed another excellent dinner at Koon Thai Eatery in Hillsdale, NJ, including crispy Red snapper fillet tempura, roasted coconut, shallot, cashew nut, cilantro, scallion, fried shallot, garlic chip, chili jam, lime, coconut cream; garlic butter- Jumbo shrimp, shrimp roe, sweet shrimp paste, white pepper, coconut meat, Brussels sprouts, cilantro; Hunger- Stir-fry wide rice noodle, jumbo shrimp, pork sausage, egg, chili jam, soy bean paste, tofu, cashew nut, scallion, lime and romaine lettuce; crispy vermicelli with Tamarind, fried shallot, jumbo lump crab meat, green apple, shallot, scallion, calamansi lime, coconut milk; chicken bomb with Fried chicken thigh, shallot, corn, tomato, scallion, cilantro, fried onion, tamarind lime fish sauce; fried calamari with Tumeric, garlic with chili sauce and chopped peanut. It all went great with an excellent Zinfandel and Syrah.

Inspired by @ChristinaM‘s recent post of a chicken and biscuit pot pie, WFD tonight was… chicken and biscuits.

Leftover chicken soup from the freezer, beefed up with more leftover roast chicken breast, frozen peas, and thickened with both cream and potato flour (not to be confused with potato starch).

Buttermilk biscuits on the side. There was some pumpkin jam to go with the biscuits, which went equally well next to the soup.
