What's for Dinner #10 - 6/2016 - June is Bustin' Out All Over Edition!

Oooh! I love cilantro and that sounds wonderful!
The peanuts do sound a bit odd but reminds me of this charred broccoli recipe i was totally obsessed with for a while

Ooh, that broccoli sounds delicious! The peanuts with the cilantro are actually perfect - the nutty crunch contrasts perfectly with the sweet, fresh herb. I realized as I was making it that it basically incorporates all the stuff I love in a cold peanut-sesame noodle salad, just without the noodles!

The nearby grocery had gorgeous cucumbers which was a pleasant surprise.
Quick dinner was a bowl of smacked cucumbers with cubed smoked tofu and some avocado. Nice lettuce-free salad thing on a warm sticky night.
The last mango mango mochi in the freezer will be dessert

I made a big batch of ceviche and picked up a couple of orders of freshly fried chips from the taco shop down the street. The only heat in the kitchen tonight is from the back yard garden grown Sinahuisa chiles in the ceviche.

WFD: ~ Rotisserie chicken with its natural juices.
~ Salad. Romaine, tomatoes, cucumber, sweet onion. Plus anything else in the fridge worth tossing in.
Gorgonzola dressing, my new-ish fave. Day old pitta, cracked, as croutons.
~ Strawberries with sour cream redux.

Simples tonight as we have a bit of a celebratory day tomorrow. I know there will be plenty of Prosecco, but not a clue about WFB/L/D. And, frankly I don’t give a big whoopsie.

Picked up some nice-looking skirt steak at Costco today, so we enjoyed those simply grilled, with some Thai basil pesto I pulled from the freezer. Sriracha-bacon sauteed green beans on the side. DH also grabbed two HUGE watermelons at Costco, so that’s what’s for dessert.

I went “gourmet” tonight. :wink: Gorton’s fish filets with spicy-mustard sauce and sliced radishes, cukes, and tomatoes on red leaf butter lettuce with a honey-lemon Caesar dressing and slivered basil. Wine.

I used to love it when my mom would make those fish fillets for us - she hates fish and almost never served it, so those (or fish sticks) were a real treat! Looks like a tasty meal!

I know what you mean about the Mom filets - we had these more than we ever had pizza delivered to our house (maybe 2x a year on the pizza?) And it turned out more tasty than I expected @biondanonima!

Fond memories of fish sticks. Even though my dad would bring home sacks of fried grouper from a local restaurant at the foot of downtown Clearwater when we was kids. That was amazing but never found fish sticks offensive

I had a very nice day antiquing on the South Shore with my sister. Several items purchased, including a very nice small, deep walnut framed mirror. It was a good day. Cuddles with her kitties and the schnarfly but very funny bulldogs from next door.

Dinner tonight is marinated and grilled chicken (marinated in teriyaki sauce, grapeseed oil, lime juice, lime zest, honey, minced garlic, Aleppo pepper, and ground ginger. Grilled on the grill pan, and served with a cucumber-mango salsa.

Sides are leftover rice pilaf, and roasted tri-color carrots tossed with olive oil, salt, pepper, and dried thyme and roasted in the convection oven.

Wine. And “Outlander” on the tube later this evening.

Instensely smokey orange pekoe tea. Simply smoked the magrets in an old wok for 5 or 6 minutes then seared them as usual. Spätzle and Sauerkraut. “Sauce” for the breasts was my own chili oil made with smoked whole pepper “cacho de cabra” (Capsicum Annuum var. Lungum) brought back from Chilean Pantagonia.

WFD: ~ Rotisserie chicken subs. The Gio Sub: Slices of tomato, roasted chicken, prosciutto cotto, aged provolone, arugula, hot cherry peppers, chipotle mayo (the unexpected twist in the list). All piled high inside a slightly toasted crusty Italian sub roll.
~ Jacques Pepin’s Roast Zucchini Salad. Zucchini rounds, S & P, pistachio oil, white wine vinegar. Showered with small basil leaves.

WWFD: From a local Mexican restaurant, Mexico Lindo. Last night’s dinner was exceptional.
~ Super Nachos with Chicken.
~ Pierno de Puerco. “Pork Loin marinated in a blend of spices, cooked on the grill then served on a bed of grilled onions, fresh jalapeño and Mexican potatoes. Comes with rice, whole beans, guacamole, sour cream, and tortillas.”
~ Mole Enchiladas Poblano. “Corn tortillas stuffed with chicken, sautéed in our authentic Mexican mole sauce. Served with rice and beans.”
~ Freely flowing Prosecco.
[Dessert… was postponed due to two humans being filled to capacity.]

Roast pork loin slathered with minced garlic, rosemary, thyme, olive oil and salt and pepper mixture. Pork got a wee bit overdone, dambit. But it was still good.

Roasted taters tossed with olive oil, salt, pepper and ground sumac.

Fresh corn (from the cob - not local), green beans, and red bell pepper sauteed with olive oil and butter, seasoned with salt, pepper, and minced fresh thyme.

Libation was vodka, lemonade and Gosling’s ginger ale. Gratuitous pic of some Nappin’ on a Sunday Afternoon from the boyz.
