We decided to play tennis before the expected 110 degree weather. Dinner was some homemade nachos topped with pickled jalapeño, carrots, and onions, with diced avocado on the side. We also had TJ’s spinach kale bites and wine.

WFD: ~ Lamb burgers on crusty rolls with Gorgonzola dressing, lettuce, cilantro, tomato, sliced jalapeno, and sweet onion. The ground lamb will be mixed with cumin, red pepper flakes, a little salt, and Sichuan peppercorns toasted then crushed.
~ Assorted condiments and sides.
~ Hoping for some local strawberries from the FM in the next town over failing that, ice cream of some sort.

We finished the strawberries brought home from our FM the other day. They were not quite fully “there” yet but a super prologue to the splendid berries we’ll be getting from now on. If it weren’t Strawberry Festival week-end at the various local farms we’d be on the road to pick the freshest berries of all, but those Festival days are just to crazy for us now. However, it’s such a delightful treat to get fresh produce picked just that morning from “our” farms.

I’m going to make a dish inspired by one of my favorite chefs . Keith Floyd R.I.P . I watched him cooking in Monterosso on you tube . I stood right where he cooked his meal .
I’m going to change up a little using torcetti pasta dressed with a little pesto and green beans . Then pan saute a piece of snapper in olive oil and dress with a bit of pesto on top of the fish. Lightly cooked tomato and pine nuts will go along it’s side . A nice bottle of wine to drink . I’ll pretend I’m in the Cinque terra .

Last night was out with several friends at Dali - it’s been quite awhile since I’ve been there, and it was wonderful, as always. With four of us there, we got a chance to try a lot more tapas. We ended up with:

Patatas Aioli (Potatoes in a Garlic/Caper Aioli)
Queso Rebozado con Miel (Deep-Fried Spanish Cheese w/Honey & Sweet Onion)
Queso de Cabra Montañes (Baked Goat Cheese w/Tomato & Basil)
Gambas con Gabardina (Deep-Fried Saffron-Batter Fried Shrimp w/Mojo Sauce)
Conejo Escabechado (Braised Rabbit w/Red Wine, Juniper & Garlic)
Solomillo en Tostada (Beef Tenderloin w/Pimento on Toast)
San Jacobo (Deep-fried Zucchini Slices and Manchego Cheese wrapped with Prosciutto)

I had quite a nice day today. Opening day of the farmers market near my hairdressers, so I did a shop beforehand. And it was a gorgeous day, it’s been a beautiful evening, and it’s supposed to be a beautiful day tomorrow as well. My thoughts go out to those in the insane heat in the Midwest, Southwest and West, and are near fires that are all over the same area. Stay safe!

Dinner was Maple-Sriracha Pork Belly, toasted couscous, and sauteed Swiss chard and red bell pepper. There was wine, and dessert was vanilla pudding (Martha Stewart’s recipe) topped with the first of the local strawberries (oh MY, they are SO sweet!), whipped cream, and cocoa powder (a little overboard on the cocoa, but still good!)

Outlander on the tube tonight.

Chicken thighs are marinating in mojo criollo, a whole chicken has been butterflied and had fresh rosemary, oregano, lemon zest, salt, lemon juice and some olive oil stuffed under the skin and a large london broil has been bathing in a Thai inspired mix of oil, soy sauce, fish sauce, lime juice, cilantro, chili flakes, ginger and garlic. All will be grilled tonight and eaten cold or room temp over the next few days (supposed to be 112 degrees on Monday.)

WFD grill lit nothing fancy a spatchcocked chicken, some smoked kielbasy, potato salad, and slaw. Beer.

Lots of biking today over to brooklyn and enjoying the sunshine with friends, then a late lunch at juliana’s for amazing pizza.
Decided to make this simple turkish chilled yogurt soup, but i used all dill and omitted the mint and skipped the rose petals. Nice light summery dish. I’m thinking leftovers will be great for breakfast

chicken milanesa with chipotle rice (ME)
rib eye tacos (THE BF)
garbanzos with chorizo, greens and porny poached egg and roasted okra with thyme (ME)
filet mignon with a brandy/cream/shitake/thyme/shallot/dijon sauce, roasted potatoes, broccolini (ME)
There was a LOT of eating out in between all these. a LOT.

tomorrow will be something korean-ish.

Definitely not a day to heat up the oven, but I did. Although I did finally turn on the A/C around 4pm - which is a good thing, since it’s going to be hot for the next couple of days (although not as bad as the heat in the Southwest and West!)

The NYT’s Buttermilk Roast Chicken marinade was used on a whole chicken breast, adapted a bit for the smaller amount of chicken, and I added some sweet paprika to the marinade. This chicken came out incredibly moist - love it! I should have added more salt in the marinade, however, but still very good.

Sides were leftover rice pilaf and steamed asparagus, along with leftover mango salsa. Wine. A quite satisfying meal.

Gratuitous picture of Buster, sitting on the bathroom counter this morning demanding (quite vocally) some attention from Mama.

For the Warrior game tonight . Couple of friends over . T bones that will be cooked on ci with some fresh rosemary and garlic along side in the pan . Torcetti ( small twists ) pasta with green beans and pesto . I’m going to mix in walnuts with the pine nuts for the pesto . Romaine salad with chopped radish with oo and red wine vinegar dressing . Burrata , Dutch Prima Donna cheese , and a baguette to munch on . Beers to drink .

Nice Father’s Day. Long walk on the beach to start the day. Had #1 son and girlfriend as well as my BIL over for dinner. I pulled out some tenderloin cuts I had wet aged for nearly 60 days. Baked potatoes, corn on the cob, tomato and basil salad and a leaf salad as sides. My wife maded cookies and the girlfriend brought mango bread. Food was plentiful. Sipped barrel aged Manhattans pre dinner.

Lentil walnut lettuce wraps tonight, topped with some avocado, green onion and salsa on romaine. A bit messy but quite good. Used the filling portion of this recipe

as threatened, something Korean. I made sliders of ground pork mixed with minced ginger, shallot, garlic & bird chilis, gochujang, gochugaru, ssamjang, fish sauce, a little brown sugar, and a little dark soy. sliced avocado for topping, as well as the fresh kimchi’d cukes i made last week, which were actually the inspiration for this dinner.

made a sauce for the sliders of ssamjang & kewpie, spread on sweet-ish lightly toasted Hawaiian rolls (not Kings, so not as sweet).

also, quick pickled daikon and carrots in rice wine vinegar/lemon/lime/orange juices, habanero, and ginger. Marinated for about 2 hours, and was served up with diced champagne mango and blackberries, with some of of the radicchio that would not die.

Been dying for corn on the cob! TJs corn was boiled, and I made a compound butter of minced cilantro, salt, and more ssamjang and sprinkled with gochugaru. i think the corn was my favorite part of the meal!

i also made a batch of carnitas for later in the week. Because, pork.

Tonight’s dinner was BBQ chicken with onion bombs, southern braised green beans and a grilled veggie gazpacho to start.

Last night was supposed to be a fat ribeye for Father’s Day, but I forgot to pull them out of the freezer and they were still solid when dinner time rolled around. Bummer, but they’ll be dinner tonight. Last night I ended up making garlicky sausage and peppers with some chicken sausages I had in the fridge, with a Caesar salad alongside. Not ribeye good, but still good!

I love reading about creative takes on my native cuisine. When you’re ingrained in a cuisine, it’s fun to see the variations that other people see and take on the food. For example, blackberries and mango…WTF?! Well, why not, if the result is delicious?!

With the exception of a few nights of grilling…tonight was the first time I’ve cooked in approximately 2 weeks.
Kitchen will reopen when the Summer is over.
I’m not sure what got into me but I made a panzanella salad with surprisingly fabulous tomatoes I picked up at Meisner’s farm stand in Columbia County, NY this weekend. I used a California white fig balsamic in the vinaigrette, not traditional but beyond delicious. I made a small meatloaf in the breville smart oven to go with the salad. A quick pan gravy from drippings and all was good. Boiled and smashed one large potato for husband. I picked up some fresh peas from Meisner’s as well but forgot to take a pic because I lost my mind due to their deliciousness, took a pic of the leftovers.
Faux strawberry shortcakes for dessert for husband…he likes them macerated in tons of sugar… :frowning:

I have mangos being delivered on Wednesday … from Florida…I am lucky to have a friend who has mango trees in his yard…anyone have any good shrimp/chicken/pork/beef with mango stir fry recipes?
