What's for Dinner #10 - 6/2016 - June is Bustin' Out All Over Edition!

Tri tip on the grill , peas and pearl onions cooked in butter . Leftover Puerto Rican red beans and rice . Would I make that recipe again . Probably not . It was just OK . I’m not a big rice fan to begin with.

Lamb loin chops, side of sautéed zucchini with a splash of sriracha for a little zing. Also bought a nice slab of applewood bacon, thick sliced for a easy appitizer.

Eating alone tonight so just pulled out a 6oz burger from the freezer. After thawing I made two smaller balls of meat from the patty so I could do two thinner smashed burgers. Put a few slices of Chimay cheese between the patties. A smear of tomato and bacon jam on the bun and topped with grilled onions and it was chow time

My fridge is a bit bare at the moment but the freezer is full of meat, so I figured I should probably get something out this morning so I didn’t have to play the “everything’s frozen, let’s have eggs for dinner” game again tonight! I pulled out a pork tenderloin this morning and by the time I was ready to head out, it had thawed enough for me to cut it into medallions. I tossed them into a marinade of garlic, olive oil, cumin, coriander, cayenne and a touch of lemon juice, to which I added a spoonful of mayonnaise to help with browning once they hit the heat. A quick minute per side on the grill pan and they’ll be done. There is also a head of broccoli languishing in the vegetable drawer, so I’ll roast or steam-saute that for a side.

~ Sand Dabs Dore. Pg. 70 “Jasper White’s Cooking from New England”. A book I have whose pages are turnng brown from old age.
The French term Doré refers to the golden glaze achieved when the fillets of fish are dusted with flour, bathed in a seasoned egg wash, then quickly sautéd. Creates a briney but slightly sweet forkful of delicious fish. Clarified butter is used to enrich the flavor and color. Something magical happens when ghee meets seafood. A simple wine based pan sauce to nappe.

~ Steamed green beans.
~ Steamed potatoes tossed with basil pesto.

I have a huge pile of Jimmy Nardello peppers on the counter that I’ve picked over the last few days and there are plenty of onions ready to pull so if I can get my rear to the store for some chicken sausage it’ll be sausage and peppers for dinner. More wedges of still warm from the sun tomatoes on the side. Summer is good.

Finished the last of the grouper cheeks with the left over potato salad on top of a shredded romaine salad

At $7.99/lb the cheeks are a bargain that I need to buy more often

Dinner meeting at a Portuguese rodizio steakhouse, rodizio is just too much so I went for the steak on a tile. Rib eye, finished cooking on a ceramic tile, served with garlic shrimp, and finished in butter. You can see the drippings from the butter and fat pooling into the plate. Very delicious!!

Recipe recommendation…? Even more delicious as leftovers sounds promising!

I had made a batch of cashew ceasar dressing sunday, trying a new recipe version but also added some crumbled seaweed and nutritional yeast as well as the optional capers.

Got home late from a long day at work and out together a quick salad with romaine, the garlicy chickpeas i made the other day, cherry tomatoes, cucumber, and a generous amount of the dressing

I used the food .com one . Won’t paste . sorry. I eliminated the green bell pepper and used a red bp fired on the stove top with skin and seeds removed . Rice and Tabasco the same . A little more on the other ingredients.
I’m interested about this one from my co worker . He doesn’t cook but says his wife makes the best rice . Use veg stock instead of chicken for you Trock .
This is all I have.
Lightly brown rice in sauce pan / 1/2 cup <>
Meanwhile blend 2 tomatoes ,and 2 cloves garlic to watery puree
Add some chicken stock .
It looks like the tomatoes are taking the place of some of the liquid
Cook until done .
I’m going to experiment . I hope you do also .

We had leftover BBQ chicken last night, along with potato salad and what can only be described as a zucchini and mushroom gratin.

Since I moved to San Francisco almost a year ago, I have had lots of mediocre potato salads, most recently from Wise Sons (3150 24th Street at Shotwell, in the Mission District).

So I decided to remedy that.

1 1/2 lbs. Yukon gold potatoes.

Cut into chunks.

3/4 cup sour cream, 1/4 cup organic mayonnaise, 2 tsp. stone-ground mustard. Shortly after this pic was taken, I added a pinch of salt and some black pepper.

Sour cream mixture, whisked together.

1/4 cup sliced green onion.

1/2 cup sliced celery.

1/4 cup chopped Vlasic dill pickles.

1/4 cup chopped flat-leaf parsley.

Potatoes were cooked in lightly salted water until fork tender (after about 20 minutes), then drained and rinsed in cold water. Then stirred in 5 tbsp. dill pickle juice.

5 rashers bacon. Finely dice.

Fold potatoes into sour cream mixture, then add remaining ingredients (celery, green onions, bacon, pickles, parsley). Taste for salt, black pepper and pickle juice.

This recipe is sized for 4-6 people.

WFD: ~ Chinese-Trinidadian Chicken with Mango Chutney, from Grace Young’s book Stir-Frying to the Sky’s Edge. Black soy sauce; ginger; ginger; onion; Scotch bonnet chiles; chicken thighs; peanut oil; soy sauce; mango chutney; cilantro.
~ Sauted FM tat soi, the last of it, thank goodness.
~ Brown basmati rice pilaf.

Thin-sliced eye round steak (always a good deal from a local supermarket, Market Basket) seasoned with s/p, cooked in butter and olive oil, topped with grated Gruyere cheese and caramelized onion, and onto a crusty Portuguese roll for a cheese steak sandwich.

Alexia sweet potato fries alongside, with the filled wineglass.

It was yum.

Tried a new BBQ place, I got “The Pig Out”. Roasted half chicken, brisket and ribs. Side of slaw and baked beans, delicious!

The one from your coworker looks like its worth a try… But no beans…
I tried this one last go around, a dominican recipe I deliberately searched for in spanish thinking that would be more traditional … It was very good but just shy of the version i love from my favorite spot.

There are no beans in his wife’s recipe . It’s Mexican rice and sounds real good .
