For those inclined to “adult beverages,” a friend turned me on to steeping chopped kumquats in white rum. Makes a great mojito.

I may have mentioned this before….i first had candied kumquats as a garnish in a restaurant, and fell in love with them. Faced with uninspiring dessert choices, I asked for kumquats with ice cream, and Grand Marnier poured over. It was amazing!

I’ve tried to buy them, with no luck, so with your guidance, hope to make them myself. Thanks in advance!

Happy to oblige! This is a Claudia Fleming recipe from her book “The Last Course”.
In a medium sauce pan, combin 2 1/2 cups sugar and 1 1/2 cups water. Bring to a boil to dissolve sugar. For this quantity of syrup , she suggests 2 cups sliced and pitted kumquats, I used 4 cups and had more than enough sugar syrup. Add kumquats to syrup, reduce heat to low and simmer for about 6 minutes until translucent, mine took closer to ten minutes. Remove with a slotted spoon. At this point I reduced the syrup a bit , added the half vanilla bean to the container of kumquats and a splash of rum if desired, my rum had orange overtones. The bean and rum were my additions, so feel free to do whatever suits you. Pour over the hot syrup, I had about 1/4 c extra syrup. I let stand overnight at room temperature, adding any additional syrup if necessary. Refrigerate at this point. Enjoy!
