Is this a two-stage process?
The apple cider is reduced with a little sugar until a syrup consistency. I also boil down cider until very thick and syrupy without sugar that I use for various pie/tart applications. Both the caramel and boiled syrup have a slight bitter edge.
The Panna cotta is just buttermilk, a little milk, gelatin and sugar.
After the Panna cotta is well set, I float a couple of tablespoons of the cider caramel over the top.
Panna Cotta redux, I might like this even better than the apple cider caramel. Unsweetened, very tart cranberry juice was used for the topping. This was really tart; to please most palates, I think equal parts of sugar and juice would be a starting point. I just eyeballed a small amount and I probably had twice the amount of juice to sugar. This thickens upon standing, so you need to stop the cooking a bit in advance.
It would make a lovely holiday dessert!

Pear hazelnut cake, a filling of pears and chopped hazelnuts sautéed in butter with a little Pear William. Demerara sugar and halved hazelnuts on top, and to gild the lily, a drizzle of caramel sauce.
