Looks wonderful! An interesting mix of flavors and textures. Did you actually use a spray bottle for the rum, or were the cake cubes gently anointed with the rum?

I transferred some French Clément rum to a very small spray bottle and sprayed them all over generously so the cubes were dampened but not “wet”. Gave just a hint of the rum flavor.

I’m also a fan of rummy desserts. I love rum. I’m also a fan of Irish whiskey. Recently, I discovered Shankey’s Whip. It’s like vanilla meets Irish Whiskey. If you enjoy putting spirits straight onto your desserts often, maybe you’d enjoy it too. I sometimes work it into my breakfasts as well, but shhhh, don’t tell my girlfriend or supervisor.

Kaffee und kuchen, a mini tart filled with frangipane , brushed with TJ’s berry curd to secure the fruit and pistachios to the top of the tart. It was very good.

Looks like a Vacherin. Was that crisp meringue on the outside?

It has a crisp outside layer made out of “crisp” meringue sticks, filled with meringue (not crisped) and chantilly cream and fresh strawberries.

Tasted like a strawberry shortcake had a one night affair with a Baked Alaska.

I think it’s a Merveilleux. And they are delicious, “Fred” bakery, in Lille, was the originator of this “marvelous” treat, now in NYC and a lot of other places. The outer coatings are numerous, whipped cream with assorted toppings. Generally, there are two meringues stacked inside with various fruit fillings. I’ve made them and they are not difficult to make.

Way beyond my capabilities even with two hands and someone else coaching!:grin:

(Part of) our cookie haul from Isgro’s: butter walnut, chocolate chip ricotta, almond something :thinking:, Florentines, Italian chocolate.

I had a Florentine and half a CC ricotta, as they are my PIC’s faves and we only had two left.
