I have to ask: what is the difference between a Spanish style fried egg and an American style fried egg?
This is Jose Andres’ method - heat vegetable oil 'til very hot, tilt the pan and drop the raw egg into the pool of oil, spoon hot oil over the egg to cook the top without flipping it.
You get a puffy white (not easy to see in the picture) and browned crispy edges. And little burns on your arms from the spatter.

Chickpeas, Calabrian chili paste, runny yolk egg…slightly suggested by the NYT. Used up the last of the chickpeas I had cooked a few days ago, it makes for a stick to your ribs breakfast!
