Although I went a different direction with the rice. I had about 2 cups of already cooked short grain brown rice. I added 5 cups of water and a tablespoon of vegetable BTB. This came to a boil and then went into a 225F. convection oven for 2 hours. Then I proceeded with the recipe as written, subbing baby kale for romaine.

I’ve only had congee for breakfast once – on the breakfast buffet at the Residence Inn in Montgomery, Alabama. I added some kimchee as a wake-up to supplement their not bad coffee. they also had outstanding scrambled eggs, maybe the best I’ve had outside of New Orleans and Paris.

I like congee every now and again. I tend to like savory breakfasts and, in this case, I needed to repurpose the rice and fish after not getting a chance to use them a couple days ago in their originally intended dinner!

Bacon and scallion scramble. Cheezy toast. A bite of leftover pork tenderloin from last night.
