Another leftover round-up. Scrambled eggs with tomato-onion (think Macella Hazen discarded onion). The last of the potato gratin. Leftover roasted carrots.
By dawn’s early light, crepes waiting to be warmed and dusted with sugar, these were stuffed with blueberry jam and homemade ricotta, made a hit with the chief taster!
Air Canada’s “business class “ , world famous, parsley omelette with chicken sausage, roasted potatoes and salsa. Yoghurt and citrus fruits for dessert.
Not too shabby, and it hit the spot.

3-ingredient pancakes (blendered oatmeal, cottage cheese, egg with splash of vanilla, optional dash of cinnamon). I wrote about these in February with no photo since they were a mess in a regular skillet. Turns out the other problem in Feb was mis-remembering the recipe – 1/2 C cottage cheese. 1/2 C oatmeal needs TWO eggs to get the proper consistency. This batch was just fine – served with fresh strawberries and maple syrup. I paused to take a photo before devouring the last one.
Cheesy scrambled eggs and English muffins. El Yucateco smoked habanero and Cholula sauces because I couldn’t decide!
