Similar egg bites were made & frozen for niece’s family as breakfasts/snacks after the birth of each of their children. We got silicon muffin pans especially for baking them – too much scrubbing needed with regular or non stick muffin pans (maybe because we also used shredded cheddar & parm cheeses). The egg bites are wonderfully convenient, and easy to eat one-handed.
I don’t have to scrub my metal pan but I also use no cheese. Well except for all that blended up cottage cheese

A scrambled egg with my absolute favorite stir-in: diced leftover baked sweet potato. Half of the mess dressed with a drizzle of maple syrup, the rest just S&P.
I picked up some Ataulfo mangoes this past weekend - mixing them with halved grapes and Fage sounds great!

Yeah, as a singleton, I wouldn’t be able to deal with a whole box of mangoes, as much as I love them. And there’s a point where my gut would say “WTF?”
If I liked fruit in my savories, I might consider adding some to the salmon curry, but … umm… no
@ottawaoperadiva suggested a salad, and it reminded me of the salmon/avo/mango tartare I made a while back. Might be an option. That, or make my PIC turn some of it into sorbet

Fage, pineapple, honey mango, grapes, walnuts. A bowl of sunshine on a really ratty, rainy, cold, not-springy-at-all day.
