I have had the same experience with duck eggs: they are very good fried with thoroughly cooked whites and I did not care for them scrambled. Would love to try a turkey egg based on @linguafood’s experience!

Pan-roasted Copper River sockeye salmon. Convection-oven spuds. A little of the Green Goddess dressing I made for tomorrow night’s dinner. Garden strawberries.
Early Father’s Day breakfast was a Finn Pancake yesterday morning. Blueberries and raspberries and a little lemon zest mixed in the batter, baked in the ancient CI. Topped with maple syrup and whipped cream. It was decadent and great fuel for the day’s yard work blitz. Berries and whipped cream repeated in the day’s dessert.
Welcome brunch for my BFF with the usual suspects plus MOAR cheese, avocado & tomato salad with basil, and smoked salmon.
I wish we could’ve bought all the cheeses at this market stand, but we settled for a chèvre with piment d’espelette.
A squash and mashed potato “souffle”, loosely based on a Jacques Pepin recipe. I used 2 cups of the leftover smash from last night, and added 1 ½ eggs (but no cheese). To go with, the tiny tail piece from last night’s sockeye salmon filet. Also present, but not shown: fresh strawberries.
Beet green frittatta with maple infused bacon. I managed to lift the frittatta out of the pan with minimal breakage this time!

A lavish brunch at a Russian place that’s been around forever, yet I’d not once been in 25 years! Both my PIC and I got the eggs benny — his with (very good) bacon,

both served on brioche with a basil hollandaise, both fantastic. My bestie had the No. 2 vegetarian breakfast, which was a STOFood: blini stuffed with arugula & cream cheese, organic scrambled eggs, avocado, hash browns with eggplant ragout, hummus, quark pancakes, bread basket.
